During its annual convention held on Monday, November 25, Teritoria—the first mission-driven voluntary chain chaired by Alain Ducasse—presented a review of the commitments required of its 430 members one year ago.
A Key Milestone in Sustainable Hospitality
Marking its first anniversary, Teritoria required each establishment to conduct a carbon footprint assessment using Clorofil and commit to the QVCT Peace & Work labeling process. This milestone highlights the network’s transformation toward sustainable hospitality, incorporating tangible commitments to social and environmental responsibility.
Clorofil: Measuring to Reduce Environmental Impact
At the core of Teritoria’s environmental strategy is Clorofil, a carbon footprint calculator specifically designed for the hospitality industry. Accessible and intuitive, it allows establishments to measure greenhouse gas emissions across all scopes, benchmark against peers, develop tailored action plans, and track progress.
One year after Teritoria’s rebranding, 246 establishments have registered on the platform, with 141 active subscribers and 101 fully completed carbon assessments, representing 24% of Teritoria members in France and Italy. Feedback from members is unanimous: the tool provides a tangible way to evaluate their environmental impact and start transitioning to more sustainable practices.
This tool is both comprehensive and easy to use for calculating our greenhouse gas emissions. While the first assessment can take longer as tools and processes are set up, subsequent assessments are much simpler! The extranet is clear and well-organized, presenting results with or without client travel, CO2 emissions by category, per €1,000 of revenue, per night/person, and per workday. Peace & Work: Putting Employees at the Heart of Hospitality
Parallel to environmental efforts, the Peace & Work label enabled Teritoria members to assess workplace quality and conditions. In its first year, 71% of eligible structures (229 out of 322) surveyed their teams, involving 4,000 employees with an average participation rate of 77%.
Among labeled establishments, 113 achieved Gold status (the highest level), 83 earned Silver, and 21 were awarded Bronze. These results reflect the priority hoteliers and restaurateurs place on employee satisfaction and retention.
The label also encouraged concrete initiatives such as enhancing onboarding processes, organizing team-building events to strengthen cohesion, and improving communication around objectives and results—both positive and negative.
This audit proved very useful in identifying areas for improvement in our HR policies and company culture. It highlighted where we fell short of employee expectations. Among the actions implemented, we now pay special attention to significant occasions (birthdays, births, project completions, etc.) by offering specific gifts such as gift cards, flowers, or spa access with massages.
