The exclusive private terminal at Manchester Airport, aether, unveils its new spring–summer menu curated by acclaimed chef Adam Reid. Part of “The Dining Experience”, the refreshed offering is rooted in the spirit of northern cooking – from the seasonal ingredients and carefully selected suppliers to the stories, flavours, and sense of place woven into every dish. Available now, the menu brings lighter plates, refined presentation, and an uncompromising focus on flavour to the passenger’s journey.

Building on the success of the inaugural menu, first introduced for the Private Terminal’s launch in November 2024, Adam Reid, Head Chef at the award-winning restaurant The French, returns with a new selection of dishes for breakfast, lunch and dinner. Setting the tone for the entire experience, the refreshed three-course offering introduces more refined, bite-sized plates designed to be shared – a natural extension of aether’s relaxed yet elevated approach to dining.

Alongside returning travellers’ favourites – including the aether breakfast bun, ‘The French’ malt loaf & beef butter, and hot smoked salmon & scrambled crumpet – the spring–summer menu introduces a vibrant selection of seasonal dishes. New highlights include honey roast swede with crispy sage & onion and yeast flakes, a three-egg omelette with crushed avocado and chilli sauce, and a nostalgic rhubarb jelly with cold custard and ginger biscuit crumble.

In keeping with aether’s evolving service style, each meal now begins with a trio of refined, one-bite snacks – a format designed to streamline the passenger experience while elevating the sense of occasion. These seasonal ‘tasting arrays’ vary by time of day: breakfast opens with elderflower-soaked fresh fruit, jammy croissant pudding, and overnight oats with dried fruit and honey; while dinner starts with beetroot & goat’s cheese cornet, a Yorkshire pudding with Lancashire cheese, and the signature malt loaf with beef butter.

Talking about the inspiration behind the new menu, Adam said: “This season is all about lighter flavours and dishes designed for a more relaxed style of sharing. While the menu still invokes a sense of northern heartiness and homeliness, with an elevated refinement which marries perfectly with the seamless airport experience aether strives to achieve.”

Continuing to work closely with local partners such as Pollen Bakery, Chorlton Cheesemongers and Cheshire Smokehouse, suppliers across Cheshire and West Yorkshire bring exceptional quality meat and dairy to the table. Every ingredient continues to tell part of the aether story. It is a menu shaped by its surroundings: refined, regional and ready to welcome the world.

For those not travelling but interested in experiencing the new offering, the experience can be booked independently from £65 per guest. A specially adapted version is also available for children aged 0–12, providing a simplified experience tailored for younger travellers, plus a 25% discount.
