Marking the start of a new era in culinary-first hospitality, Appellation Healdsburg has officially opened as the flagship destination of the visionary brand co- founded by Michelin-starred chef Charlie Palmer and hospitality leader Christopher Hunsberger. The 108-room retreat is designed to immerse guests in Sonoma County’s food, wine, and agricultural heritage. The resort blends approachable luxury with a deep sense of place, debuting with two signature Charlie Palmer dining venues – Folia Bar & Kitchen and the scenic rooftop destination Andys Beeline Rooftop – along with the much-anticipated Terroir Spa inspired by the earth and its elements, and more than 15,000 square feet of indoor-outdoor event space.

Designed in collaboration with master architect John Hill and EDG Design, Appellation Healdsburg is spread across two distinct neighborhoods, intentionally positioned to heighten exploration and create a ‘distinctly here’ guest experience. Eight-and-a-half acres of lush landscapes are woven together by winding paths that meander through mature native trees, abundant culinary gardens, and inviting open-air gathering spaces. The spacious resort features two pools: Foss Pool, complete with exclusive day-use cabanas and Water Shed, an Airstream that serves as a poolside culinary hub; and the restful Serenity Pool, complemented by the adjacent luxurious Terroir Spa and an indoor-outdoor state-of-the-art fitness studio.

Guests are greeted at the custom-designed butcher-block style front desk with a thoughtful welcome snack which could be anything from a perfectly ripe tomato harvested from the on-site culinary gardens or a just-baked chocolate chip cookie, setting the tone for a stay filled with sensory experiences. The lobby is evocative of a residential entertaining space and infused with hand-crafted details. The back-of-the-house is brought front and center in the lobby with chef-led tastings, demonstrations and art installations that encourage interactions between guests, locals and the culinary team. Playful indulgence extends to everyday rituals including the resort’s custom mustard yellow Worksman Tricycle, which makes its rounds delivering house-made ice cream and frozen treats to guests.

Through Crafted at Appellation, a calendar of hands-on workshops led by local makers, farmers, artisans, and Appellation’s talented team, guests might learn the art of cheesemaking with a Sonoma dairyman, master sourdough with a Healdsburg baker, or create botanical cocktails with herbs harvested from the hotel’s gardens. With more than 50 classes offered annually, the program blurs the line between leisure and learning, allowing travelers to take home a tangible connection to Sonoma’s artistry. Crafted classes will be hosted throughout the resort grounds, including the Main House’s two dedicated maker rooms—Artisan and Maker—equipped with farmhouse sinks, flexible classroom setups, and audiovisual support.

Folia Bar & Kitchen

At the heart of the hotel’s Main House, Folia Bar & Kitchen brings Charlie Palmer’s progressive American cooking fueled by live oak embers, where nearly every dish touches open fire—seafood grilled over flame, oils smoked in-house, citrus charred for unexpected depth—while EDG Design frames the experience with redwood harvest tables, two live-action culinary stations with counter seating, bespoke tile patterns that echo Sonoma’s farmlands, and sweeping windows that draw vineyard-draped hills into the dining room. The menu evolves daily in step with the seasons, sourcing from trusted partners such as Hog Island Oyster Co., Andante Creamery, Mary’s Organic Chicken, and Feed Sonoma, a local co-op linking chefs with small family farms to ensure a steady rhythm of vibrant produce. Preserved pantry ingredients and garden infusions extend the ethos to the bar, where cocktails layer house-smoked citrus, fruit vinegars, and floral syrups with equal parts craft and imagination, mirrored by a robust lineup of zero-proof creations.

Guiding Folia’s culinary vision is Chef de Cuisine Reed Palmer, a Healdsburg native whose experience spans some of the world’s most celebrated kitchens, including Blue Hill at Stone Barns, Amass in Copenhagen, Ilis in Brooklyn, and the three-Michelin-starred SingleThread, just minutes from the hotel. Trained at The Culinary Institute of America at Hyde Park and Cornell University, Palmer brings a modern perspective rooted in sustainability, seasonality, and ingredient integrity, returning home to honor Sonoma County’s agricultural heritage. Under his direction, signature dishes include Grilled Chili Pepper Rockfish with salsa verde, Savory Manchego Bread Pudding made with Quail & Condor sourdough, and Spaghetti alla Nerano with house-extruded pasta and summer squash. A live charcuterie station, expansive wine cellar, and roving bread and butter cart round out the dining experience, underscoring Folia’s celebration of craft, community, and cuisine.

Andys Beeline Rooftop

Perched atop Appellation Healdsburg with panoramic vineyard views, Andys Beeline Rooftop is a stylish, high-energy escape offering a breezy, playful counterpart to Folia. Designed by EDG to capture floor-to- ceiling sunset views over Healdsburg’s rolling hills, the space features a dramatic onyx bar and backbar, and infinity bottle features. Plush lounge seating, and a design inspired by bee flight paths, with vibrant tones, gold accents, and moon-like pendant lights add a sense of drama after dark. The shareable menu blends coastal bar classics with inventive twists, including Tsar Nicoulai Caviar + Texas Toast with egg yolk jam, Kanpachi Ceviche brightened with aguachile and delfino cilantro, and out-of-the-box bites such as Tuna Onigiri and Basil & Lime Madeleines.

Garden-infused cocktails and rooftop-grown zero-proof creations highlight the beverage program, from The Buzz with burnt honey syrup, Meyer lemon, and Sonoma Bros Bourbon to The Queen Bee featuring Hanson Vodka and the Golden Sting with Serrano Tequila. Local craftsmanship is celebrated throughout, including the main bar’s curved “infinity” design showcasing spirits from regional distilleries. Designed for lingering, Beeline transforms from sunny and social by day to moody and magnetic by night, connecting guests to the surrounding landscape and expansive night sky whether indoors or on the deck.

Terroir Spa

Terroir Spa channels Sonoma County’s agricultural bounty into a deeply immersive wellness experience. Inspired by the concept of terroir—the idea that soil, climate, and careful tending of the land shape not only the region but also human wellbeing—the spa offers a sensory journey rooted in place. The spa journey at Terroir begins in the comfort of each guestroom, where robes and slippers are delivered to guest rooms ahead of a scheduled treatment, allowing time to relax and transition into the experience. When ready, guests make their way to the spa, which features five treatment rooms, including a couple’s suite with its own outdoor terrace. Guests are guided through a personalized pre- treatment ritual that begins with a dip in the Serenity Pool hot tub, followed by contrast therapy alternating between the steam room and cold shower to invigorate circulation and awaken the senses. They then move to a dedicated relaxation space, where a magnesium-infused foot bath is enriched with fresh herbs harvested from the property’s culinary gardens, paired with eye patches and a heated or cooled neck wrap to provide yet another moment of calm. Each treatment also incorporates the resonant tones of a sound bowl and carefully selected aromatherapy.

Treatments draw on products not available anywhere else in the United States, including InLight balms— made in England by a pioneering herbologist-homeopath whose formulations are energized with music to amplify their healing properties—and Saya organic skincare from Australia, featuring botanically rich blends like coconut body polish and lemongrass wash. Traditional Eminence products round out the offering, while the spa team acts as wellness guides, tailoring each service to individual intentions.

Guestrooms and Suites

Each agrarian-inspired room and suite at Appellation Healdsburg–ranging from 325 to 1,160 square feet– seamlessly invites the outdoors in, with floor-to-ceiling doors that open fully to balconies and patios overlooking vineyards or serene pools. Earthy green and golden hues echo the surrounding hills and landscapes, while open-air spaces capture the gentle breezes of the nearby Pacific Coast, creating an immersive and comfortable connection to nature. Rooms are spacious and well equipped with signature oak wood and etched mirror pantries, featuring local products and luxury amenities to embrace wine country living – pantry essentials including locally-roasted organic Wolf coffee, small-batch teas and a complimentary bottle of Sonoma County wine, as well as 300-thread count Matouk bed linens, and a luxury bathrobe and sandal set. The Healdsburg and Olive Suites feature a separate living area and oversized balconies while the thoughtful design of the Appellation One and Two-Bedroom Suites epitomizes the bounty and beauty of Healdsburg with sophisticated living space, generously sized private balconies with panoramic views, kitchenette, and spacious bathroom with soaking tub.

Meeting and Event Spaces

Raising the bar for meetings, events, and weddings in Healdsburg, Appellation Healdsburg offers the largest luxury event space downtown to-date, with 11 distinctive venues tailored for gatherings of all kinds. At the heart of the property is The Grange, an expansive and versatile indoor-outdoor, contemporary barn-inspired space with a signature exhibition kitchen designed for interactive culinary experiences. The adjoining al fresco space, The Lawn, expands capacity to 500 guests, offering sweeping vineyard views. For more intimate, family-style gatherings, Folia Bar & Kitchen features two private dining venues: Atelier Alyse, a refined indoor space for up to 20 guests, and Joan’s Table within Jerry’s Grove, an al fresco setting beneath 150-year-old olive trees, complete with a live edge table and firepit, surrounded by culinary gardens.
