Hilton Motif Seattle announces the opening of its reimagined rooftop concept, Frolik Kitchen + Cocktails. Set to open on Monday, September 29, Frolik Kitchen + Cocktails will blend elevated dining with laid-back charm, featuring a coastal-inspired menu, led by newly appointed Executive Chef Angel Huapaya.

Perched above downtown Seattle, Frolik Kitchen + Cocktails offers a distinctly Pacific Northwestern experience that blends refined flavors in a welcoming atmosphere. Open year-round with 132 open-air and 87 enclosed seats, the 219-seat, 4,000-square-foot rooftop is one of the largest in downtown Seattle and the only one that remains open year-round, making it a standout destination in the market.

The rooftop – designed by Degen & Degen – blends modern design with earthy charm, featuring soft, neutral tones that create a calm, coastal-inspired ambiance. Rattan-style textures are woven throughout the space, from the outdoor light fixtures and chairs to the indoor booth seating, adding an organic elegance that feels effortlessly approachable. Subtle wood accents, cozy seating, and lush greenery complement the open-air setting.

At the helm of Frolik Kitchen + Cocktails’ culinary program is recently appointed Executive Chef Angel Huapaya. Chef brings a soulful, globally inspired approach to the kitchen, shaped by his Peruvian and Honduran roots, along with years of honing his culinary skills at luxury hotels. A Le Cordon Bleu graduate, he has led acclaimed kitchens across the country from Fontainebleau Miami Beach to Hilton properties, including Conrad Fort Lauderdale Beach and Waldorf Astoria Park City.

Chef Angel’s lunch and dinner menus are centered on the region’s coastal flavors, with a strong emphasis on fresh seafood. In addition to a vibrant Seafood Tower brimming with shrimp, crab, oysters, scallops, menu highlights include the Salmon Chowder with sofrito, celery, onion and peppers, garnished with salmon roe and crispy leeks, and the Steamed Mussels and Clams in a housemade tomato garlic broth finished with basil chili butter. Chef Angel also offers a new take on the Roasted Beet Salad, this one incorporating local Rainier cherries and roasted coconut cream.

Complementing the menu is a curated selection of craft cocktails and local draft beers, perfect for pairing with panoramic views of the city. Highlights include The Evergreen Mule, crafted with Astraea Forest Gin, Amaricano Amaro, Italicus, lime, and ginger beer, and The Clarified Pear, made with Absolut Pear, ginger liqueur, lemon, and Earl Grey tea.

Frolik Kitchen + Cocktails is located at 1415 5th Avenue. Beginning September 29, hours of operation will be Monday through Friday between 6:30 AM to 10:00 AM; 11:00 AM to 3:00 PM; 4:00 PM to 11:00 PM and Saturday through Sunday from 11:00 AM to 3:00 PM and 4:00 PM to 11:00 PM. Reservations for Frolik Kitchen + Cocktails are available via OpenTable. The rooftop can accommodate private events for up to 250 guests and may be booked by contacting the Event Sales Team at [email protected].
