The new Spring Menu celebrates the freshest seasonal ingredients, offering guests a culinary journey through the vibrant flavours of spring

Nestled within the iconic St. Pancras Hotel, The Booking Office 1869 proudly presents its Spring Menu. Inspired by the seasonal bounty, this menu offers guests a taste of spring with dishes that highlight the best of the season, from Dorset crab with Yorkshire rhubarb, puffed rice and pickled cucumber to Wild garlic risotto with asparagus, pickled mushroom, brioche croutons and aged Parmesan.

A Culinary Celebration of Spring

The Booking Office 1869, a 19th-century Gothic Revival masterpiece, ideally located beside the British Library and St. Pancras International Station continues its legacy as the hotel’s vibrant centrepiece. Amongst the High Victorian Gothic design, guests can savour a collection of dishes that reflect the spirit of spring and London’s modern energy.

Signature Dishes That Tell a Story

Each creation on the menu reflects the essence of spring, brought to life through contemporary culinary techniques and rich flavours.

New signature dishes include Dorset Crab with Yorkshire rhubarb, puffed rice, and pickled cucumber; marinated heritage beetroot with whipped barrel-aged feta and maple vinegar; Cacio e Pepe tortellini with ricotta, pecorino, and black pepper; miso-glazed aubergine with mint yoghurt and tahini dressing; 30-day dry-aged ribeye with green peppercorn and mushroom sauce and Koffman’s fries; and poached Yorkshire rhubarb with Balinese vanilla mousse.

A Reflection of the St. Pancras Experience

Housed within the architectural marvel of the St. Pancras Hotel—a testament to High Victorian Gothic Revival design—The Booking Office 1869’s Spring Menu is a celebration of the past and present.

From the grand Chambers Suites to its vibrant dining spaces, the hotel welcomes the season of Spring mirrored in this collection of dishes within the contemporary luxury surroundings.
