In his vivid and characterful review, Alexander The Guest recounts a memorable stay at the Capella Bangkok, blending insightful observations with personal charm. From the outset, the experience is marked by exceptional culinary adventures and warm, attentive service. The Thai restaurant on-site impresses early on with a diverse à la carte and set menu offering, an unexpectedly stellar wine list, and authentic dishes prepared by the talented Chef Kannika Jitsangworn. Her decades of experience in global luxury kitchens shine through each vibrant plate — from pomelo salad with crispy fish to rich red and green curries — served in a shareable, homey yet refined style. The coconut juice, sunshine, and relaxed ambiance complete a perfect afternoon. Later, Alexander visits Côte by Mauro Colagreco , the hotel’s two Michelin-starred French restaurant. Here, he is warmly welcomed by Chef Gwennolé Le Bras — a familiar face from ,Mirazur — and sommelier Sabino Jacobone, Thailand’s best. The evolving menu features meticulously plated dishes like langoustine pasta with tom yum notes, trout with trout roe sauce, and an outstanding pigeon dish with mandarin and morel. Standout moments include a surprise find of a 2019 Leflaive Puligny Montrachet and a thoughtful dessert lineup, including coconut panna cotta with apple and shiso sorbet. Throughout, service is refined, playful, and seamless. Outside the dining rooms, Alexander enjoys the exclusivity of the 101-room hotel, appreciating the near-private pool and understated luxury. Even after a slight mishap with outside food, the staff’s swift recovery efforts — including a “magic potion” — left a lasting impression. However, he notes the incongruence of the transfer car quality compared to the rest of the experience. He concludes that while the hotel may not quite be the best in the world, it is undoubtedly the best in Bangkok. Its combination of privacy, attention to detail, high-end design, and exceptional staff makes it a rare gem in a bustling city. A final applause goes to both restaurants, with special praise reserved for COTE, and a warm recommendation extended to future guests.
