The Walt Disney World Swan and Dolphin has appointed Greg Sherman director of food and beverage. He will oversee the complex’s multi-million-dollar food and beverage operation, comprised of 23 outlets.

With a highly impressive professional background, Sherman brings over 25 years of food and beverage experience, with roles including executive chef, general manager, regional general manager and director of training and development. In 2014, he joined Rosa Mexicano as general manager. His exceptional leadership skills and deep understanding of the food and beverage industry ultimately propelled him to regional director of operations, vice president of operations and chief operating officer.

As COO, Sherman was responsible for restaurant, beverage and culinary operations, private dining and sales, marketing, IT, finance, human resources and training and development. His accomplishments included: opening 6 new locations over a 16-month period; overseeing 12 Rosa Mexicano locations and 6 other concepts within the restaurant’s portfolio; managing an hourly team of over 1,600 associates and 130 managers and designing and implementing hospitality training programs.
