Subject to planning and licensing approval, the 180-seater space will be transformed into a The Hamptons-inspired seafood restaurant called The Crab & Lobster Fish Shack.

Majoring on ‘high-end fish and chips’ the restaurant will showcase all types of fish, crab, and lobster sourced from ‘the most trusted, high quality suppliers of sustainable fish and seafood’.

The family are planning to invest £250,000 into the site – which has been closed since 2020 – and say the project will create 60 new jobs.

“Having deliberated over this space for around a year, since we became aware of its availability, we are extremely excited to finally announce that our new concept, The Crab & Lobster Fish Shack, is coming soon to South Queensferry,” says Bryan Coghill, who runs the business with his pastry chef son Jack.

“We think that this part of South Queensferry, with its fantastic infrastructure, and surrounded by hundreds of new homes, is simply perfect, and has huge potential. As such, and although trading conditions remain challenging for the hospitality sector which can be said to be in the doldrums, we are confident and excited to be making this our second location, following on from the massive success we’ve had, and will continue to have, with Jack ‘O’ Bryan’s, in Dunfermline.”

Bryan is a well-known chef in Scotland having now worked in the industry for 40 years. His past projects include Edinburgh’s Black Pig.

The kitchen at Jack ‘O’ Bryan’s is now largely overseen by Jack but Bryan and his wife Michelle remain closely involved with the business.
