Called BAO Night Market, it will be dishing up classic baos alongside fried chicken, soft serve and bubble tea at the street food hall from 26 November.
Baos on the menu will include a double prawn; a double stack daikon; and a double stack pork. Also available will be a series of larger baos filled with a choice of fried chicken (main image) or panko-crumbed aubergine in a soy garlic glaze.
Based on the night markets of Taiwan, BAO Night Market will also serve crispy Taiwanese fried chicken with slaw and hot sauce for dipping; and fries with curry sauce and chilli crisp.
Diners can also order a meal deal featuring a bao of their choice along with fries and slaw.
To drink, guests can opt for a caramelised brown sugar Taiwanese bubble tea, and to end with something sweet there’s a peanut milk soft serve.
“Growing up in Taiwan, the night markets were the best places to hang out,” says BAO creative director Erchen Chang.
“My friends and I would hop from stall to stall, each one renowned for a signature dish, ordering xiao chi or ‘small eats’. BAO started life trading at markets, so we’re excited to go back to our roots and bring that vibrant spirit to Market Halls Victoria.
“It’s a totally different energy to restaurants – much more fast-paced and dynamic – and we love the flexibility that comes with changing up the menu.”
