The Experimental group is expanding its Paris offering with the opening of the Experimental Marais Hotel, a 5-star, 43-room establishment. Scheduled to open on 11 March 2025, this new address will be accompanied by the launch of its Temple & Chapon restaurant, headed by chef Mélanie Serre.
A neo-Gothic setting designed by Tristan Auer
The hotel, housed in a building previously acquired in October 2024, has been completely redesigned by Tristan Auer (Hôtel de Crillon, Les Bains, Hôtel du Louvre).
Inspired by the history and soul of the district, he has created a neo-Gothic atmosphere with spectacular volumes, elegant arches and colourful stained glass windows. The space combines bold design with hushed comfort, reflecting the distinctive hospitality of the Experimental group.
The establishment includes a large restaurant, cocktail bar, spa and swimming pool, offering an immersive and refined experience.
Temple & Chapon: a restaurant inspired by the great New York addresses
The Temple & Chapon restaurant, designed as a large New York-inspired table, can seat 100 diners. Tristan Auer, in collaboration with artist Clovis Retif, has created an immersive décor, combining photographs, drawings and warm colours to create an intimate, cosmopolitan atmosphere.
Chef Mélanie Serre (Joël Robuchon, Louis Vins, L’Auberge du Bassin) offers a menu focusing on grilled meats and American classics, with exceptional cuts of meat (porterhouse, T-bone), refined seafood (rockefeller oysters, crab cake) and generous dishes to share.

L’American Bar: a tribute to speakeasies
L’American Bar pays tribute to iconic New York bars such as Please Don’t Tell, Attaboy and The Raines Law Room. On the menu are signature cocktails such as Benton’s Old Fashioned (fat washed bourbon) and the Quetzal, accompanied by a cutting-edge selection of California and Oregon wines.
Wellness at the Spa Experimental Marais
The Spa Experimental Marais, designed in collaboration with the Susanne Kaufmann brand, offers tailor-made facial treatments and massages combining science and nature. The wellness area also includes a swimming pool, offering a truly relaxing interlude in the heart of the capital.
