
Nerolab — an Italian lifestyle and dining group based in Rome — has opened its seventh location and first U.S. flagship restaurant on Wall Street in New York City. The all-day restaurant, known for its classic Roman cuisine like the concept’s signature carbonara dish, opened this month inside Trump Tower on Wall Street.
Nerolab was founded by brothers Alfredo and Carlo Polizzi, who still lead the dining group, and the U.S. location is operating under the culinary direction of executive chef Matteo Anselmi.
The flagship restaurant measures 21,500-square feet, seats 350 guests, and is housed in a prime spot that remained vacant for almost a decade.
“New York City offers the perfect setting for Nerolab’s first U.S. flagship thanks to its cultural vibrancy, dynamic food scene, and global sensibility,” the Polizzi brothers said in an email interview.
“The Financial District, in particular, provided a unique opportunity to breathe new life into a long-vacant landmark — the historic Trump Building — and introduce a destination that reflects both the pace of the city and the warmth of Italian hospitality.”
This restaurant is the largest Nerolab location in the concept’s portfolio and is designed to accommodate business lunches, corporate events, and evening dining. Besides the larger footprint, much of the design is the same as the other locations, with most furnishings being shipped from Italy to ensure that the ambiance remains the same, even overseas.
Nerolab’s format shifts depending on the time of day, changing from grab-and-go breakfast to business lunches in the afternoon, and more formal dinners in the evening.
The menu has been tweaked to reflect local tastes and ingredient availability, and other signature dishes include Cacio e Pepe, Pinsa Romana (a flatbread deriving from the Lazio region of Italy), Roman sorrisi (a Roman stuffed sandwich variation), and housemade Italian pastries served for breakfast.
“For Nerolab, New York City represents not only a strategic market but also a cultural crossroads where food, design, and lifestyle intersect,” the Polizzi brothers said.
Nerolab plans to open an additional 10 locations across the United States by the end of 2025.
