COTE Korean Steakhouse Debuts at the Venetian Las Vegas

Gracious Hospitality Management (GHM)—the team behind COTE Korean Steakhouse and COQODAQ—has unveiled COTE Vegas at the Venetian Resort. The opening, part of the property’s $1.5 billion transformation, marks the Michelin-starred restaurant’s first West Coast flagship.

Bringing COTE to the Venetian Resort in Las Vegas

Founded by Simon Kim, COTE redefines the steakhouse model through a Korean lens, thanks to high design, immersive dining, and theatrical presentation. The Las Vegas opening is also deeply personal for Kim.

“Las Vegas is where it all started for me—studying at UNLV, managing restaurants and casino floors, and learning the fundamentals of hospitality from the ground up in a city that never sleeps,” says Kim, founder and CEO of GHM. “The energy of the Strip, the spectacle of lights, and endless possibilities have always lived in the DNA of COTE, and now we’re bringing that full circle.”

Set within the iconic Waterfall Atrium, the 17,000-square-foot restaurant—designed by Rockwell Group—elevates COTE’s design language into a new era defined by drama, light, and motion.

Guests enter through a cinematic gold-and-crimson portal into a grand, theater-inspired dining room that unfurls like a flower—an homage to the COTE emblem—and spirals around a glowing, high-energy central bar.

A fully immersive experience at COTE Vegas

Stadium-style seating ensures every guest feels part of the show, while dynamic lighting shifts with the energy of the evening. A live DJ booth adds rhythm to the dining experience, transforming the space from an intimate meal to a full-scale spectacle.

Above, skybox-style private dining rooms overlook the main floor for an exclusive view of the action. Hidden behind a lush green terrarium wall, an intimate bar provides contrast—a quiet yet decadent retreat that captures COTE’s duality of energy and elegance.

“Our collaboration with Simon Kim and Gracious Hospitality has resulted in some of the most rewarding and exciting creative experiences,” says David Rockwell, founder and president of Rockwell Group. “We are thrilled to have helped conceive a journey for COTE Vegas diners that alludes to the language and atmosphere of its predecessors but takes an entirely new and unprecedented approach to the theatricality of dining.”

Following the success of COTE Singapore and the breakout opening of COQODAQ in New York, GHM continues its global expansion with 550 Madison Avenue. The project, set to open in 2026, will feature multiple new dining concepts, as well as New York’s second COTE location.
