A complete renovation of a local landmark
Originally built in 1978 as Hotel Los Gorriones, the property has undergone a €32 million refurbishment that transformed it into a luxury resort. The investment also allowed the hotel to double its workforce, increasing from 150 to 320 employees, including several young people recruited through social inclusion programs.
The new Paradisus Fuerteventura features 363 rooms and suites, some overlooking the ocean or surrounding natural park. The resort includes four swimming pools, among them a saltwater pool, surrounded by landscaped gardens. Now rated five-star luxury, it is also the first wellness resort in Meliá’s portfolio.

Local gastronomy at the heart of the concept
Dining is a key part of the resort’s identity, with nine restaurants and four bars offering a range of experiences from informal poolside venues to refined dining. The signature restaurant, Mahos, is led by Michelin-starred Chef Germán Ortega, whose menu celebrates local produce and zero-kilometre ingredients inspired by the flavours of the Canary Islands.
Each Paradisus property is designed around its destination, incorporating local craftsmanship, materials, and culture. As Gabriel Escarrer explained:
“Each hotel is designed by its destination. For us, the worst outcome is when a guest stays inside and never discovers the place. That’s why our Destination Inclusive programme offers cultural, culinary, and sports experiences rooted in the local environment.”
Supporting Meliá’s broader expansion strategy
The Paradisus Fuerteventura project is part of Meliá Hotels International’s ongoing expansion in the luxury and lifestyle segments. The neighbouring Innside by Meliá property will be converted in 2026 into Zel Fuerteventura, the island’s first hotel under the brand co-created with Rafa Nadal.
With this addition, the Paradisus brand now operates three properties in the Canary Islands, alongside Paradisus Gran Canaria and Paradisus Salinas Lanzarote. This new opening confirms Meliá’s commitment to enhancing its presence in strategic Mediterranean and island destinations while adapting to evolving traveller expectations focused on well-being, local experience, and sustainability.
