New Waterloo, the independent hospitality management company, has opened Albert Hotel in Fredericksburg, Texas. Welcoming guests from January 3, the country retreat is a new destination in the heart of Texas Hill Country.
Albert Hotel is the first of two January openings for New Waterloo, with the Fidelity Hotel in Cleveland’s central business district set to welcome guests on January 27.
Albert Hotel features 105 guest rooms, multiple dining options, a full-service spa and event spaces.
Accommodations range from bunk rooms to suites, including the Albertina House, a historic four-bedroom residence suited for families, bridal parties or corporate retreats. Rooms are designed with custom-built furniture, tiled showers and curated textiles.
The Albert Hotel includes four dining venues. The Restaurant at Albert Hotel, led by Michelin-starred Chef Michael Fojtasek, offers seasonal dishes for breakfast, lunch and dinner. The Saloon serves as a local gathering spot for whiskey, beer and conversation. The Pharmacy provides coffee, pastries and sandwiches made from scratch; while Junebugs BBQ, slated to open this spring, will expand the hotel’s culinary options.
The Spa at Albert Hotel, set to open later this week, offers seven private treatment rooms and signature services, inspired by local traditions.
Event spaces total 3,600 square feet and include a 1,200-square-foot mezzanine, outdoor lawn, private dining rooms and hospitality suites. The property can host indoor receptions for up to 220 guests and outdoor ceremonies for up to 90 persons.
Designed by Clayton Korte, the hotel retains the 175-year legacy of the Keidel family while embracing contemporary aesthetics. Historic structures like the Keidel home and Brockmann-Kiehne House have been integrated in the design. Word + Carr Design Group crafted the landscape with native Texas grasses, live oaks and mesquites, using reclaimed materials to create gardens that reflect the region’s natural beauty.
“This project represents our vision of hospitality,” said New Waterloo CEO Bart Knaggs. “The Albert Hotel is more than a property; it’s our love letter to Fredericksburg, which embodies years of meticulous planning and a profound respect for local history.”
