The Tivoli will open on the spa town’s Andover Road on 26 July and marks the pair’s first foray into a slightly more urban domain.
The gastropub has been restored and renovated with the rural feel and ethos of the pair’s previous pubs, which include The Sherborne Arms in Northleach, The Lamb Inn in Shipton-U-Wychwood, The Fox Inn in Broadwell, and the recently revamped The Bell Inn at Langford.
With space for 120 covers, it will be one of the duo’s largest establishments to date and will have a large bar area, and two floors for dining, including two private rooms for parties.
There will also be an outside walled terrace, where food and drink will be served.
The Tivoli will serve a seasonal menu of dishes, innovative twists on hearty pub classics based on a nose-to-tail philosophy of cooking.
Dishes on the launch menu will include devilled kidneys on toast (pictured); pigs head scrumpet and salad Lyonnaise; Cornbury Park venison sausages, mash and gravy; Iberico pork bavette; and sticky toffee pudding.
Pub snacks will also be available alongside a daily lunch specials written up on blackboards and regular chicken and steak nights.
“We’ve been lucky enough to take on and restore some great buildings so far, and we’re excited to be stretching our wings a bit with The Tivoli – it’s a legendary spot to those who’ve been in Cheltenham for a while, or grew up around here, so it felt like a natural fit for us,” say the pair.
“We welcome lots of the urban crowd who drive out to our rural pubs, so we’re looking forward to bringing our own slice of the countryside to their doorsteps.”
