A rich, spiced spread made from speculoos cookies, cookie butter adds instant indulgence to everything from baked goods to beverages. Its nostalgic, dessert-like appeal is drawing attention from both restaurant chefs and consumers craving comfort with a twist.

Cookie butter’s appearances on restaurant menus have spread from dessert to more elaborate dishes and drinks of all kinds, including cocktails. But it is seeing particular strength as a coffee flavor.

According to market research firm Datassential, 76% of the U.S. population is familiar with cookie butter, and 56% have tried it, with awareness highest among kids aged 17 and under. It appears on 44% more restaurant menus than it did four years ago.
