DoubleTree by Hilton launches new restaurant concept

DoubleTree by Hilton has announced a new restaurant and bar concept called piebird. The first locations will open in Nanuet, N.Y., and Asheville, N.C.

The concept was created by StiR Creative Collective, Hilton’s in-house consultancy for food and beverage. Piebird will offer updated takes on classic American dishes and seasonal pies. The first location is expected to open in fall 2025 at DoubleTree by Hilton Hotel Nanuet, followed by a second in early 2026 at DoubleTree by Hilton Hotel Asheville – Biltmore. Additional sites are planned.

“For over 55 years, DoubleTree by Hilton has been a symbol of comfort for travelers worldwide, offering warm hospitality and caring service, and piebird is poised to continue this tradition by capturing the essence of home – rooted in nostalgia and familiarity,” said Shawn McAteer, brand leader, DoubleTree by Hilton. “Through StiR Creative Collective, we’ll bring this innovative concept and scalable brand to life in DoubleTree hotels across the U.S., ensuring that guests enjoy exceptional culinary experiences that feel like home.”

piebird is named after a ceramic vent used in pie baking. The menu will feature items like Chicken Pot Pie, Biscuits and Gravy, Southwest Cobb, and Tomato Jam Grilled Cheese. Breakfast options include Monkey Bread French Toast and quiche. Desserts will highlight seasonal pies and the piebird Pie, a chocolate custard with malt balls. Beverages include the piebird Palmer and reimagined cocktails like the Banana Daquiri and Mandarin Mango Margarita. The Cookie Martini is also featured.

StiR Creative Collective has launched several recent dining projects, including Leonessa at Conrad New York Downtown and Ayda at Waldorf Astoria Cairo Heliopolis. It also developed five concepts for Conrad Orlando and dining venues at Signia by Hilton Atlanta and Canopy by Hilton Toronto Yorkville.

The design of piebird will emphasize relaxed comfort. Interiors will include warm textures, soft colors, floral wallpaper, and vintage-inspired decor. The setting aims to reflect DoubleTree’s identity and create a casual dining space that feels familiar.
