Chef Matt Wilden, Perro

The intimate neighbourhood restaurant and bar will launch in Kings Heath in late June 2025

Chef Matt Wilden has announced that his new restaurant, Perro, will open in late June. Perro will fuse Mexican-influenced small plates with cocktails, designed by Katie Rouse of Couch, natural wine and creative community spirit.

Tucked into a cosy 12-cover space in Birmingham in Kings Court, Kings Heath,  guests can expect small plates infused with the flavours of salsa, mole, and adobo that draw inspiration directly from Mexican traditions.

By day, Perro will deliver a flavour-forward grab-and-go experience featuring stacked deli sandos, Vietnamese iced coffees, three delicious house-baked goods, and rotating seasonal agua fresca.

As night falls, Perro transforms into an intimate, low-lit 12-seater restaurant and bar. The mood will be casual and fun, but the food offering will be serious, anchored in deep research and respect for the complexity of Mexican cuisine.

“I fell in love with the depth of Mexican food,” says Wilden. “It’s one of the most misunderstood cuisines, and I’m nowhere near mastering it – but that’s the point. Perro will grow and evolve as we learn. We’re not doing ‘traditional’ Mexican, but every element we serve is rooted in research and reverence.”

On Friday and Saturday nights, Perro will stay open late, serving incredible cocktails and snacks into the night. The discerning list of cocktails is the handiwork of Best Bartender of the Year, Katie Rouse of Couch.

Wilden’s aim is that Perro is also a platform for collaboration. The chef envisions that the neighbourhood restaurant will also act as a creative hub for the area with a rotating calendar of creative events

“At its heart, Perro is about creative people supporting creative people,” Wilden says. “Whether it’s food, music, fashion, or art – it will be a space to share, experiment, and celebrate.”
