
Ella, an American bistro with modern comfort food, will open Tuesday, June 17, in a Dallas location formerly occupied by Chido Taco Lounge, the company said this week.
Ella was created by local restaurateur Blaine McGowan, whose vision for the restaurant was to create a space where food, cocktails, and hospitality converge.
“We wanted to bring something to the neighborhood that wasn’t there — something welcoming and refined. We want to hit on all cylinders with this concept: exceptional food, drinks, and service,” McGowan said in a statement.
Ella’s atmosphere has a female-forward feel blending modern design with an inviting warmth. Earthy green paneled walls, dramatic 12-foot globe chandeliers, a red tiled bar, and booths blend old-world sensibility with modern charm. Hidden behind drapery is a staircase that leads guests to Customs Speakeasy.
On the mezzanine, the existing Customs Speakeasy will remain open, offering craft cocktails crafted with premium Mexican spirits from bartender Jairo Castillo.
Julian Shaffer helms Ella’s beverage and service program. He serves as both beneral manager and beverage director.

Kyle Farr serves as executive chef. He formerly was at Dallas’ Sachet and Boulevardier bistro.
Farr’s menu includes shrimp and masa dumplings with roasted peppers and tomato with charred broccolini; steak tartare with tenderloin, Dijon, cured egg yolk, and served with fresh bread; pork cheeks, served with orange jus, roasted carrots, and sunchokes; and a pasta Bolognese, made with fresh pappardelle tossed in a housemade sauce and finished with parmesan.
Ella will be open for dinner service Tuesday-Saturday 4 p.m. – 10 p.m. with lunch and weekend brunch to be added later. The Customs Speakeasy is open and serves cocktails Tuesday-Saturday 5 p.m. to midnight.
