Accor has converted the Grand Mercure The Vintage to Peppers Hunter Valley in Australia, the relaunch coming after a multimillion-dollar renovation of the property.

Peppers falls under Accor’s Premium, Midscale and Economy division (PM&E) and currently has encompasses 27
hotels and 4,749 total rooms in Australia, New Zealand and Inonesia. Accor’s website describe the Peppers brand as: “From country estates to relaxing beachside resorts, from world-class golf resorts to romantic vineyard retreats, Peppers combines personal and friendly services with exceptional food and wine.”

The brand originally began in the Hunter Valley and is now reestablishing its presence in the region. The reimagined hotel is part of ‘The Vintage’ precinct, surrounded by vineyards, countryside and a Greg Norman-designed 18-hole golf course.

Owned by Stevens Group and Accor Vacation Club, along with additional owners, the hotel features upgraded one-, two- and three-bedroom villas. Each apartment underwent a full ceiling-to-floor renovation with modernized kitchens, new lighting, elegant furnishings and natural textures inspired by the region. According to Accor, these “immersive spaces… balance natural tones and elevated design, inspired by the spirit of the Hunter Valley.”

A new reception area was also completed, combining Peppers’ signature sophistication with the area’s relaxed ambiance.

“The return of Peppers to the Hunter Valley is a proud and symbolic moment for us. This is where the Peppers story began, and to see the brand come full circle – now elevated, refreshed, and reconnected to its roots – is incredibly special. The transformation of this property reflects the strength of our partnerships and the continued demand for meaningful, premium escapes that balance charm with sophistication. Peppers Hunter Valley is not just a beautiful place to stay – it is a return to what makes travel personal, local, and unforgettable,” said Adrian Williams, chief operating officer of Accor in the Pacific region.

Peppers Hunter Valley will also soon feature a Mediterranean-inspired restaurant and bar called Mezze, led by the team behind NINETEEN. The new venue will open upstairs in the precinct, continuing its transformation as a destination for dining and relaxation.
