Chef Flynn McGarry to Launch Cove New York’s Hudson Square

Next month, chef Flynn McGarry will open Cove, a new fine dining restaurant in New York’s Hudson Square neighborhood.

A California-inspired concept, Cove reimagines traditional fine dining for a new generation. The dining rooms wrap around an open kitchen, where McGarry and his team prepare and present each course in real time.

The space is crafted to feel both refined and relaxed, offering “a luxurious dining experience without the formality,” says McGarry. “Cove is about simplicity, care, and attention. I want guests to feel as relaxed as they are in their own homes, while being served the highest quality of food surrounded by a thoughtfully designed space.”

West Coast modernism at McGarry’s Cove

As with his previous ventures like Gem and Gem Wine, McGarry personally designed the interiors of Cove—overseeing the layout, material palette, and all furnishings.

Drawing on his lifelong appreciation for vintage objects and West Coast modernism, he created an environment that feels both intimate and sophisticated.

Custom cherry and ash wood furniture provides a grounded, tactile presence, while sheer white curtains suspend from floor to ceiling, softly filtering natural light and framing the space.

Warm pendant lighting adds a cozy glow, complementing the ceiling millwork and wooden wall panels. Floral wall art rendered in soft, natural pastels injects subtle color and visual interest as well.

In collaboration with North American ceramicists, McGarry also developed a line of custom tableware specifically for Cove. These bespoke pieces, alongside other elements of the restaurant’s design, will be available for purchase at Gem Home, his Nolita home goods store, café, and grocer.
