Eastwind Hotels, the Catskills-born boutique hospitality brand known for its refined glamping sensibility and thoughtfully rooted connection to nature, announces the relaunch of its flagship property, Eastwind Hotel + Bar, in Windham, New York. This new chapter introduces the Mountain House, featuring 12 design-forward guestrooms, and Dandies, a fresh culinary concept from Eastwind Hotels Co-Founder and Food and Beverage Director Daniel Cipriani.

Now totaling 32 guestrooms, Eastwind Hotel + Bar steps into a new era — expanding its vision while staying true to its roots. This evolution inspires guests to rediscover the Catskills through elevated design, soulful dining, and the same spirit of togetherness that has defined the Eastwind Hotels experience from the start.

Perched hillside overlooking Windham Mountain, the new Mountain House adds 12 intentionally styled accommodations to the property, complementing the brand’s signature Scandi-chic aesthetic, featuring designer-curated Mid-Century furnishings and warm, tactile finishes. Each room is designed to invite the outdoors in, framed by sweeping views of the surrounding peaks, dense pine forest, and the ever-changing Catskills light.

Mountain House introduces four distinct room types: four Forest King Rooms nestled against a serene pine backdrop that shifts with the seasons; four Mountain King Rooms offering mountain vistas framed by clusters of trees; four Mountain Studio Suites featuring loft-style layouts and panoramic views across Windham Mountain and the surrounding hills; and the spacious Pine Suite, which connects the adjoining Mountain King and Forest King Rooms to create a flexible, residential-style layout ideal for families or groups.

Introducing Dandies, Where It’s “A Little Bit Fancy”

Building on the success of its sister restaurant Dandelion at Eastwind Oliverea Valley, Dandies carries the culinary story up-valley with a seasonal, elevated approach to barbecue classics. Conceptualized by Eastwind Hotels Co-Founder and Food and Beverage Director Daniel Cipriani, Dandies is a casual gathering place to enjoy innovative comfort food, cold beers, craft cocktails, elevated coffee drinks, bespoke ice cream, and fresh mountain air, set within a modern glasshouse with sweeping views of the Catskill Mountains.

The menu offers plates, including Colossal Bone-In Short Rib, Smoked Half Chicken, Cedar-Grilled Steelhead Trout, and Crispy Trumpet Mushrooms, alongside hearty sandwiches, including Masa-Dusted Shrimp, BBQ Chicken, and a Grilled Burger. Plates come with a choice of two sides, including Root Vegetables, Coleslaw, Charred Delicata Squash, Mac and Cheese, and French Fries served with a selection of house sauces, including Garlic Aioli, Lemon Aioli, Dutch War Sauce, and Andalouse Sauce. The offerings extend into the morning with savory Dutch Babies, breakfast sandwiches, and a full coffee and cappuccino station featuring ACE Coffee.

The beverage program includes a custom Pilsner created in collaboration with Evil Twin Brewing, called ‘A Little Bit Fancy’, as well as the Eastwind Oatmeal Stout Beer, in addition to a selection of craft cocktails. The space will offer gelato and ripieno year-round, with highlights including the Vanilla Bean Gelato and the Fructus Danica Sour by Evil Twin — a refined take on the classic beer float, crafted with a bright and flavorful fruited kettle sour. Designed to appeal to locals and guests alike, every dish balances flavor and familiarity with Eastwind’s signature refinement.

True to Eastwind’s signature style, the space, conceptualized by Co-Owner and Creative Director Julija Stoliarova, feels open, modern, and Scandinavian — with creme tones accented by natural wood, vintage brick flooring, retro whimsical light fixtures, a custom-built bar and a Malm Imperial Carousel Fireplace. Outdoors, guests can settle into elevated picnic spaces with communal tables and forest seating, inviting long, leisurely meals in the open air. A seasonal outdoor biergarten anchors the experience, inviting leisurely afternoons surrounded by good food, cold beer, and easy company, inspired by the European art of slowing down over food and conversation.

Dandies is open Thursday and Friday from 12 p.m. to 9 p.m. and Saturday and Sunday from 8 a.m. to 9 p.m. A breakfast menu is served from 9 am through 11 am, and an all-day menu as of 11 am Saturday and Sunday.
