The Westgate Hotel Announces Debut of Bonne Vie Brasserie & Bar

SAN DIEGO, California—The Westgate Hotel announced that Bonne Vie Brasserie & Bar, a dining experience that combines French culinary tradition with the flavors of coastal California, will open on Nov. 19.

“Bonne Vie embodies our passion for culinary craft, vibrant energy, and thoughtful design,” said Annie Fitzgerald, general manager. “We’re thrilled to share a space where guests can enjoy beautifully prepared dishes, meaningful conversations, and moments that feel joyful and genuinely inviting.”

Design

Conceived by San Diego designer Jacoi Mann, Bonne Vie’s European influences include deep blue and gold tones, textured beige and earth-toned fabrics, velvet seating, and chandeliers. The bar has custom Sapele tables with marble and granite tops with satin brass accents, metal toe caps, and Blue Bahia polish. Bonne Vie Brasserie & Bar has Steelite china and silverware.

Culinary Team and Menu Offerings

Executive Chef Fabrice Hardel, whose 30+ year international career includes kitchens across France, Luxembourg, the United Kingdom, and the United States, leads Bonne Vie Brasserie & Bar. He is now supported by Food & Beverage Manager Mary Watson, who has over two decades of restaurant and event management experience.

The menu offers modern American interpretations of classic French dishes, with fresh, local ingredients from purveyors such as Vesta Produce and Santa Monica Seafood. Offerings include Burgundy Escargot in garlic parsley butter and French Onion Soup with rich, slow-simmered beef broth. American-inspired dishes include the banh mi-style Fried Chicken Sandwich with kimchi and sweet chili aioli, and Braised Short Rib with roasted parsnip mousseline. Seafood offerings, such as Icelandic Cod Meunière with potato purée and brown butter sauce, are available as well.
