Waldorf Astoria London Admiralty Arch has announced that chefs Clare Smyth and Daniel Boulud will open its two signature restaurants when the hotel launches in 2026.

Smyth will lead Coreus, a fine dining concept celebrating British seafood, while Boulud will bring his French-inspired Café Boulud to the rooftop of the hotel.

Coreus will be located in the former home of the First Sea Lord, drawing on the building’s maritime heritage. Smyth, whose Notting Hill restaurant Core holds three Michelin stars, will focus on locally sourced seafood and seasonal produce. The venue will also feature her Whiskey and Seaweed bar concept, offering a curated selection of UK whiskies alongside cocktails and wines.
