Bossa site to relaunch as Maroto

Maroto is connected to the bar of the same name that is located below the Marylebone restaurant and, like Bossa, will feature a Brazilian-influenced menu.

It comes after Restaurant ​revealed the closure of Bossa back in February​​ after less than eight months trading.

At the time it was suggested that Bossa’s owners were preparing to relaunch the site under a new name and concept linked to Moroto, which continued to operate following the restaurant’s closure.

With Landgraf no longer involved in the business, Maroto’s kitchen will be led by chefs Mehmet Talayhan and Mark Tolentino, who both previously worked under Ben Murphy at Launceston Place.

Described in the press notes as ‘a casual, relaxed fine dining experience’, Maroto’s à la carte menu will feature starters of grilled tiger prawns with tucupi bisque, prawn mayonnaise and picante mango; pork belly with tutu de feijão and piccalilli; and cured seabass with pickled courgette, finger lime and malagueta pimenta.

Mains will include bacalhau (cod) poached in butter; Aylesbury duck breast; asador monkfish; and roasted cauliflower with capers and raisins.

All mains will be available to order with sides such as feijao carioca guisado (braised pinto beans); and mandioca frita (cassava fries) seasoned with vinegar powder; and will be served with a selection of fives sauces each designed to hit one of five flavour profiles – spicy, sweet, salty, sour and umami.

The sauces will change throughout the seasons, but for the launch menu will feature: BBQ maitake with yuzu and soy; parsley sabayon; black truffle emulsion; burnt orange gel; and avocado with chilli and coriander.

Alongside beers, wines and champagne, the drinks menu will feature a selection of Brazilian-inspired cocktails including a Maroto punch with cachaça, lime, papaya, passion fruit, coconut and guava.

Maroto’s dining room will hold around 60 covers and a ‘smart, minimalist’ design with wood panels, stone, neutral colours, and black light fixtures.

As with Bossa, both table and counter seating will be available with the latter overlooking the restaurant’s open kitchen.

Maroto will officially open on 11 September.
