The Seasonal New Menu by Skyline’s Award-Winning Bar Manager Features Repurposed Ingredients & Interactive Elements Inspired by Venice

Hilton Molino Stucky Venice, the iconic Venetian hotel and former flour mill on Giudecca island, is delighted to unveil a brand new seasonal cocktail menu at its iconic Skyline Rooftop Bar.

Available from the start of November at the highest bar in all of Venice, Skyline’s menu provides a new cocktail menu to surprise and delight every palate this autumn and winter. From cinnamon and pear blended martinis to a Campari caviar-adorned negroni, the menu provides cocktail lovers with the ultimate way to warm up, unwind and take in the views in true dolce vita style this season.
A truly immersive experience for all the senses, the menu is the brainchild of Skyline’s new bar manager Valentina Mircea and includes a QR code to allow guests to watch the mixology team create their cocktail virtually before it is served to them. This provides guests with the opportunity to learn more about each cocktail and to experience backstage behind the bar as patrons select their tipple of choice.

The talented team at Skyline Rooftop Bar is committed to a sustainable mixology method spearheaded by Valentina, with each cocktail created with local produce while breathing new life into used and surplus ingredients that would otherwise be discarded.

Artisan Negroni
Sospiri Gin | Campari | Rabitt Premium Bitter | Bottega Vermouth
A unique take on the iconic Italian aperitivo, Skyline’s Artisan Negroni distils the essence of a Venetian winter’s late afternoon – early evening. Crafted with locally-made Sospiri gin, Rabbit premium bitter from Treviso and vermouth from nearby Bottega, this cocktail harnesses the finest local ingredients from across the Venetian terroir, delivering a strong, spicy and bitter profile that reflects the city’s dynamic spirit. Finished with a Campari caviar garnish that sparkles like the lights on a cold Veneto evening, the beverage is a true example of Skyline’s ‘Project Kilometre 0’, which champions using local ingredients to minimise environmental impact.

Stucky Storm
Stucky Gin | Tamdhu | Ginger Sake | Super Lemon Juice | Sugar Syrup
The Stucky Storm evokes the spirit of a Venetian winter storm with its powerful blend of Stucky Gin and smoky Chivas, softened by the zesty punch of super lemon juice -extracted using the entirety of a lemon, ensuring zero waste and maximum flavour. Ginger sake and yuzu foam add a warming layer, reminiscent of the gardens that inspired Hilton Molino Stucky Venice’s very own gin. A bold yet refreshing cocktail that mirrors the resilience and beauty of Venice under the winter skies.

2o7 Sky
Amaro Locale 207 | Italicus Bergamot Liqueur | House Agrumi Liqueur
2o7 Sky invites guests to soar above the Venetian rooftops and savour the golden glow of a sunset over the lagoon. This smooth, aromatic blend of Amaro Locale, Italicus, and Skyline’s homemade Agrumi Liqueur – made from surplus citrus fruit celebrates the city’s rich history and vibrant flavours. Crafted with a hint of citrus sweetness, the drink captures the lively essence of Venice as it transitions from day to night, much like the colours that dance across the skyline at dusk.

Glacial Martini
Calvados | Martell | Cinnamon Syrup | Fresh Orange | Citric Pear | Dehydrated Pear | Ricotta Cream
A tribute to Venice’s clarity and elegance, each sip of the Glacial Martini reflects the smooth waters of the city’s canals. A rich blend of Calvados and Martell is brightened by fresh orange and citric pear, creating a cocktail that is both refreshing and luxurious. A topping of dehydrated pear with ricotta cream adds a delightful and sustainable surprise; leftover cream from the martini’s clarification process is ingeniously repurposed into a zero-waste garnish.

Mystique
Reposado Altos | Vida Mezcal | Cadello Anise Liqueur | Vermouth del Professore
Inspired by Venice’s iconic masquerades, Mystique is a cocktail of mystery and allure. The smoky notes of Vida Mezcal pair perfectly with the strong, smooth base of Reposado Altos, while locally-made Cadello anise liqueur from Treviso adds a spicy aniseed twist that lingers on the palate. Vermouth del Professore rounds out this rich, complex cocktail, evoking the hidden layers of Venice’s cultural tapestry.

Lagoon Mist
Bumbu | Campari Cask | Brown Sugar | Angostura Bitters | Aria di Orange Juice Foam | Mixed Bitter Spray
Inspired by the breath-taking spectacle of the emerald waters of the Venetian lagoon meeting the crimson hues of the morning sky, Lagoon Mist brings together the rich, smooth notes of Bumbu rum and the bittersweet complexity of Campari Cask, balanced with Angostura and brown sugar. Topped with an airy Aria di Orange juice foam, it mimics the soft mist that hovers over the canals at sunrise.

Skylight Brew
Orange Juice | Egg White | Citrus Sugar Syrup | Dilmah Tea
As the dawn breaks over the Venetian skyline, painting the sky with hues of orange and gold, a new day begins to unfold. Inspired by the tranquil beauty of this moment, Skylight Brew is an alcohol-free cocktail that captures the essence of the awakening city and is the perfect refreshment for any time of day or night.

Italicus | Super Lemon Juice | Nardini Brandy | Rich Sugar Syrup | Egg white | Recioto Del Valpolicella
Inspired by the colours of the sunset, Sunset Palette is an intoxicating blend of Italicus, Nardini brandy and Recioto del Valpolicella, balanced with sugar syrup and creamy egg white.
