
A delicious union of craftsmanship and creativity has arrived in Mayfair today. World-renowned jeweller Jessica McCormack and celebrated master pâtissier Nicolas Rouzaud have come together to create an edible tribute to McCormack’s latest collection, Fruit Salad, a joyful celebration of colour, seasonal beauty and refined artistry.
This collaboration is born of a long-standing friendship between two exceptional creatives whose ateliers sit just moments apart on London’s Mount Street. The result is Cerisier, a patisserie of striking elegance and flavour that captures both the fleeting sweetness of summer and the vibrant spirit of Jessica’s design.
Cerisier is composed of almond and sakura mousse layered over delicate almond sponge and a crisp almond praline base. At its heart lies a vivid cherry confit, complemented by cherry and sakura cream and finished with a glossy cherry gel. Floral, fragrant and exquisitely textured, it is a finely balanced homage to the blossom season. Adorned with jewel-like dots in varying sizes, the dessert mirrors the signature rubies and playful vibrancy of McCormack’s Fruit Salad collection.
“Jewellery, like pastry, is about telling a story through the senses,” says Rouzaud.
“Jessica’s designs are joyful and bold, and I wanted the flavours and form of the cake to reflect that same energy and elegance.”

Raised in Toulouse, Rouzaud’s reverence for natural ingredients was formed in his family’s orchard. He was raised with a deep respect for precision and fine craftsmanship, which continue to underpin his work. Following his training with the Compagnons du Devoir, Rouzaud honed his skills in the kitchens of Le Bristol Paris, The Lanesborough and, now, The Connaught, where he has firmly established himself as one of Europe’s most celebrated pâtissiers.
