
Chef Michael Caines MBE will open his first London restaurant at The Stafford hotel in St James’s on 17 September.
Caines will lead the kitchen with executive head chef Simon Ulph. The restaurant, named Michael Caines at The Stafford, will replace the hotel’s former venue The Game Bird.
It will serve modern European dishes based on Caines’s “terroir cuisine”, using seasonal produce from the British Isles and supporting regional suppliers.
Menus will include à la carte options alongside a tasting menu, with dishes such as warm lobster salad with cardamom vinaigrette, pan-roasted Brixham turbot with shellfish chowder, and the hotel’s long-standing beef Wellington and Dover sole.
The Stafford, established in 1912, has hosted guests including members of the Royal Family and wartime figures.
According to Caines, the new restaurant would “honour its setting” while showcasing seasonal British produce.
