Chewton Glen Hotel & Spa unveils redesign of F&B spaces

Chewton Glen Hotel and Spa has unveiled a redesign of its dining room, bar and drawing rooms as part of an ongoing refurbishment led by interior design studio Goddard Littlefair.

The hotel, part of the Iconic Luxury Hotels group, said the dining room, which includes the Orangery and Summer Room, now has interiors influenced by the surrounding New Forest landscape. Terraces have also been added for outdoor dining.

New menus have been introduced featuring British seafood and produce from local suppliers, as well as ingredients from the hotel’s orchards and kitchen gardens. Dishes include halibut T-bone with sea vegetables, seabass with fennel purée and shrimps, and Somerset chicken with romesco.

An adjoining tasting room will serve breakfast in the morning before hosting wine tastings, cookery classes and evening events later in the day.

The drawing rooms have been restyled as a social space for guests and visitors, with interiors combining natural tones, wood finishes and new furnishings. The hotel said the area will offer different services throughout the day, including morning coffee, afternoon tea and evening drinks.

The Colonel’s Bar, dedicated to former resident Colonel Tinker, has also been refurbished with new décor and seating. The bar will serve cocktails, wines and spirits, including a house gin produced by Iconic Luxury Hotels.

The refurbishment comes under the direction of newly appointed general manager Guy Owen. The redesign is the first stage of a wider transformation programme ahead of the hotel’s 60th anniversary in 2026, which will include further work on guest suites and new visitor experiences.

Guy Owen, general manager of Chewton Glen, said: “The relaunch of our Dining Room, Drawing Rooms and Bar represents much more than a simple aesthetic update for Chewton Glen – it marks an exciting new chapter for our much-loved Hampshire retreat, a property that has consistently reinvented itself throughout its storied history. We’re not just refreshing our F&B spaces; we’re reimagining the entire guest experience to ensure Chewton Glen remains a favourite for generations to come.”
