Brian Trollip promoted to Dishoom CEO

Previously managing director at the Bombay-inspired Indian restaurant group, Trollip’s new role sees him looking after all aspects of the business as it continues to grow and evolve.

Trollip joined the restaurant group five months into its life in November 2010 when it had just one restaurant in Covent Garden and employed around 50 staff. Today, the group operates 13 restaurants, comprising 10 Dishooms and three Permit Rooms, the third of which opens in Oxford this week, employs around 2,00 people and reported a turnover last year of £117m​​.

He became managing director at Dishoom in October 2020.

“Brian has been with us almost from the beginning of our journey in 2010,” says Dishoom co-founder Shamil Thakrar.

“We had to learn a lot and Brian was pretty instrumental in making it work. Over the last 14 years that Brian has been putting up with us somewhere along the way we became a good team, and started opening more restaurants.”

Trollip has been instrumental in Dishoom’s continued growth and development, including the creation of its more drinks-led sister brand Permit Room​​.

“Particularly since the pandemic Brian has taken on a huge amount of responsibility. His role now is really looking after all aspects of the business,” adds Thakrar.

“Brian is one of the strongest culture advocates I’ve ever met, he really understands how to motivate people and get the best out of them.

“He is one of the most talented people I know and I’m really proud to be working alongside him. It seemed very natural to give Brian the official title of CEO.”

Thakrar says that he and co-founder Kavi will continue in their roles at the business.

“We’re still here to stand behind Brian and help him. There is no intention for us to go anywhere, we still love what we’re doing.”
