
Chef and television presenter Nick Nairn will step away from the Kailyard restaurant at Dunblane Hydro in March 2026, bringing to an end a 16-year partnership with the hotel.
Hotel operator Apex Hotels said the collaboration would conclude by mutual agreement, with Nairn planning to focus on his restaurant and cook school in Port of Menteith.
The decision follows the reopening of the hotel as Apex Dunblane Hydro in November and forms part of wider plans to redevelop the restaurant offering.
Nairn has led the Kailyard since its launch and has been closely involved in shaping its menus, service and training.
Following Narin’s departure, the restaurant would be reimagined with a new concept, name and design aligned with the group’s longer-term plans for the hotel.
The changes to the restaurant are part of a wider refurbishment programme at the property, which includes bedrooms, public areas, leisure facilities and conference and events spaces.
Apex described the works as one of the “largest” investment periods in the hotel’s 147-year history.
Brian Scanlin, who has worked alongside Nairn for several years, will remain in post as executive head chef, providing continuity as the restaurant transitions to its new format.
A farewell event is planned for 26 March to mark Nairn’s contribution to the restaurant and his time at Dunblane Hydro. Further details on the new restaurant name, menus and design would be announced in early 2026 as the refurbishment programme continues.

Nairn added: “I’m very proud of all the Kailyard has achieved. However, it’s time for me to focus exclusively on the restaurant and cook school in Port of Menteith. I wish only the best for the Dunblane Hydro and the team. I’ll be a very interested onlooker as Apex invests in and improves the hotel. I believe it’s in good hands and I look forward to visiting as a guest.”
