Fernando Corona Burch to oversee the food and drink offer across Rosewood London

In his role he will be responsible for providing strategic direction to the hotel’s culinary team and overseeing the food and drinks programme at its Holborn Dining Room, Mirror Room, and Scarfes Bar venues as well as in-room dining and banqueting.

Corona Burch joins Rosewood London with more than 20 years of experience in the hospitality industry across Europe, Mexico, Asia Pacific and the UAE. His career spans Michelin-starred restaurants, luxury hotels, and previous leadership roles with Rosewood Hotels & Resorts, including executive chef at Rosewood Hong Kong and Rosewood Beijing, and director of culinary operations at Rosewood Phnom Penh and Rosewood Beijing.

Most recently, he was part of the pre-opening team and served as the executive chef at the Park Hyatt Los Cabos in Baja California Sur, Mexico, bringing valuable experience in launching and establishing new culinary programmes.

Corona Burch’s culinary journey began at three-Michelin-starred restaurants El Celler de Can Roca in Girona and Restaurante Arzak in San Sebastian, Spain.

He later took on his first executive chef role at Hotel Banyan Tree Shanghai on the Bund, where he was part of the pre-opening team.
