The Balmoral names Matthew O’Donnell as head sommelier at Number One

🍷 Matthew O’Donnell, a seasoned sommelier from Airdrie, has been appointed head sommelier at The Balmoral's Number One restaurant in Edinburgh. With over ten years of experience, including positions at Ashford Castle, Grantley Hall, and Gleneagles, he is known for his expertise in world-class wines. O’Donnell, holding multiple WSET qualifications, aims to enhance sustainable wine offerings, especially from Austria. Number One, established in 1997, boasts four AA Rosettes and is Michelin Guide recommended.

The Francis Hotel Bath unveils £14m refurb

🏨 The Francis Hotel in Bath will reveal its refurbished 98 rooms in November, following a £14 million redesign by 3DReid, who previously worked on Gleneagles and Cameron House. Originally Georgian townhouses, the hotel was transformed in 1884. Updates include modern amenities and a new restaurant, Emberwood, which opened in May. By 2026, a thermal spa will be added. The project repositions the hotel as a townhouse destination, blending heritage with contemporary hospitality.

The Newman and Saira Hospitality celebrate first cohort of graduates

The program aimed to foster industry diversity and progress, benefiting participants like Seynabou, now a front desk agent.

James Thomson receives AA lifetime achievement award

🏨 James Thomson, a Scottish hotelier, received the AA Lifetime Achievement Award at the AA Hospitality Awards in London on September 22. Thomson, known for revitalizing historic properties, opened The Witchery in Edinburgh in 1979. He later acquired Prestonfield House in 2003. His charitable efforts, including “Lunch with an Old Bag,” have raised £9 million. The Witchery was named Scotland's AA Best Restaurant with Rooms and the world's “most romantic hotel” by Big 7 Travel.

Luke Selby to join Palé Hall Hotel as chef partner

🍴 Luke Selby will become chef partner at Palé Hall Hotel in North Wales starting January 2026, coinciding with the 18-month refurbishment of Le Manoir aux Quat’Saisons in Oxfordshire. Selby will collaborate with owners Anthony and Donna Cooper-Barney to revamp dining options, including The Bryntirion Inn, which underwent a £1m refurbishment. Room to Reward celebrates 10-year anniversary

Since 2015, the charity has partnered with over 950 hotels, donating breaks to more than 3,500 volunteers nominated by 1,100+ organizations. Founder Nicolas Roach aims to recognize people who selflessly help others.

DoubleTree London completes multi-million pound room redesign project
