Hotel chefs attain new qualifications

🍳 Joey Longmire-Dodd, 28, sous chef at Lancaster House Hotel, completed his 2-year NVQ Hospitality Manager Level 4. Sam Pierce, 38, first to achieve a distinction in Level 3 Senior Sous Chef apprenticeship with Babcock International. The training, supported by English Lakes Hotels Resorts & Venues and Inspiro Learning, enhanced their leadership skills, allowing them to manage shifts and plan menus. Their progress supports head chef Damien Ng. English Lakes Hotels is hiring for various hospitality roles.

Solent hotel completes six-figure spa and wellness renovation

🛀 Solent Hotel and Spa in Fareham, part of Daniel Thwaites, completed a six-figure renovation of its wellness space in three months. The refurbishment includes a new pool hall, salt sauna, steam room, jacuzzi, and storm shower with a design inspired by the coastal location. New wellness facilities aim to improve cardiovascular health, strength, flexibility, and respiratory health. Memberships for 2025 start at £46 per month, with a 15% discount on food and drink at FYR Restaurant in January and February, excluding February 14th and 15th. Nathan Chart and Gemma Barratt emphasize the inclusive and high-quality environment created for relaxation and wellness.

Europe’s most technologically advanced hotel unveils exciting new tech upgrades

🏠 London’s Eccleston Square Hotel, known for high-tech luxury, unveils an extensive tech upgrade. Highlights include Apple TVs by ROOMNET in all 39 rooms, an energy-efficient automation system by Leading Edge Automation, integrated with HSYCO BMS software and MEWS PMS. Opened in 2011, the hotel is lauded for merging luxury with technology. The new system improves energy savings, preconditions rooms for guest comfort, and offers real-time air quality adjustments. Eccleston Square Hotel also features Hästens massage beds in each room, advanced entertainment options, and access to private gardens.

Palladium hotel group to open doors of the unexpected Ibiza hotel for 2025 summer season

🏨 Palladium Hotel Group announced in April 2024 the evolution of Ushuaïa Ibiza Beach Hotel into The Unexpected Hotels brand. The renovation includes The Ushuaïa Tower, to be renamed The Unexpected Ibiza Hotel with 181 rooms and suites, alongside the existing hotel offering 234 rooms and suites. In May, the expansion into the UAE was announced with The Unexpected Al Marjan Island Hotel & Residences, attracting over $100 million investment for 422 rooms and units in Ras Al Khaimah. The brand will debut in Ibiza in 2025 and in the UAE by 2026.

Foxhills Celebrates Busiest Christmas period with Record-Breaking Bookings

🎉 Foxhills Club & Resort in Surrey celebrated a record-breaking Christmas in 2024 with a 57% increase in Christmas Eve & Boxing Day dining attendance. Hotel bookings jumped 43% with room occupancy and 45% more guests under the Mistletoe and Holly packages. Christmas parties popularity rose by 10%, while New Year's Eve attendance skyrocketed 146%, offering events like a black tie gala and a five-course menu at The Fox dining rooms. Managing Director Tej Walia credits the team's hard work for the festive success.

International chef at Mandarin Oriental praises Williams’ global reliability

🧸 Mandarin Oriental Mayfair, a 5* London hotel, outfitted its kitchens with Williams Refrigeration equipment in a project completed in spring 2024. The hotel features multiple restaurants, including Akira Back and Dosa, totaling 800 covers daily. Executive Head Chef Jihun Maxime Kim oversees culinary operations, emphasizing the importance of reliable, easy-to-clean, and energy-efficient refrigeration. The project included coldrooms, blast chillers, and custom Chef's Drawers. The Galgorm Group and consultant Humble Arnold Design worked on the project, overcoming Covid-related delays.

Kuro bagels to open in Notting Hill

🍔 Julian Victoria and Jacob Van Nieuwkoop, creators of KURO Coffee and Bakery, will open KURO Bagels in London's Notting Hill in late January 2025. The menu features artisan bagels with seasonal, sustainable ingredients, ready-made options like The Smoked Salmon, and custom choices with a variety of flavours. KURO Coffee opened in 2021 and KURO Bakery in 2022; both are known for Japanese-inspired offerings. KURO Bagels will have a 15-seat terrace and offer delivery via Deliveroo.
