Do Non-Alcoholic Wines Belong On Michelin Star Menus?

🍷 80% of NA beverage drinkers also consume alcohol, providing a taste reference. Catalan restaurant Gaig, recognized by the Michelin Guide, features Noughty's non-alcoholic (NA) wines. The no- and low-alcohol market is growing by 20% annually, with a forecasted value of $36.6 billion by 2030, where NA beer holds 60% of the market share. The NA wine segment, valued at $52 million, grows by 23% yearly. Noughty, with six premium NA wines, sees popularity in Michelin-starred venues and is favored by chefs like Andrew Pern and Oscar Lorenzzi. The largest NA markets are Europe and the UK, with the US experiencing a rise in nondrinkers. Asia and Singapore's NA demand has increased since 2021, notably for business lunches. The UK sees 55% of drinkers reducing alcohol intake, and 57% of global consumers participated in Dry January or Sober October in 2023. Health concerns drive this shift, with alcohol identified as a leading cause of cancer. NA wine options are effective on wine lists, and Noughty's sparkling Chardonnay has just 14 calories per glass. Restaurants, while facing challenges in stocking NA wine, recognize the evolving consumer preferences and potential for higher profit margins, with Noughty focusing on 'by the glass' placements.

Restaurant kitchen equipment gets smarter and more sophisticated

The show focuses on cost-effective, energy-conserving equipment aiding in labor savings and efficiency. It will highlight food lockers, educational talks, facility design, sustainability, and smart kitchen innovations. Chipotle's Autocado division was sold to Serve Robotics, which also works with Uber Eats and 7-Eleven, to automate tasks like preparing guacamole. The event will showcase advanced refrigeration and eco-friendly coolants, self-sanitizing surfaces, and the Middleby Corp.'s energy-efficient Invoq Hybrid kitchen appliance.

Richtech Robotics debuts robot-run coffee shop in Las Vegas

🤖 Richtech Robotics unveiled Clouffee & Tea, featuring Adam the AI barista, in Las Vegas on Feb. 9. The robotic barista can interact, take orders, and serve milk teas, coffees, and desserts at Town Square shopping Center. Richtech's president, Matt Casella, emphasized the milestone in leveraging AI for the hospitality industry. Plans for more locations are underway, with Adam already operational since last June at a Ghost Kitchens International site in Dawsonville, Ga.

Why so many international restaurants are targeting the U.S. for growth

🍳 The National Restaurant Association expects a 4% growth in the industry, with sales exceeding $1.1 trillion. International brands, including the U.K.'s PizzaExpress, Canada's Cluck Clucks and CRAFT Restaurant & Beer Market, Sweden's Eggs Inc., and Japan’s Bread, Espresso & are entering or expanding in the U.S. Filipino chain Jollibee surpassed 100 locations in 2024. Eggs Inc. opened its first U.S. location in Denver, while Bread, Espresso & opened in Redondo Beach, California. WingsUp! is targeting Texas and Florida for expansion, citing Texas as the world's eighth largest economy. CRAFT Restaurant & Beer Market plans to open in Dallas in early 2026. The International Franchising Association forecasts a 2.5% increase in franchise locations, with quick-service franchises expected to grow 5.4%, generating $322 billion this year. Cluck Clucks opened in Sugar Land, Texas, and plans to expand from Georgia to the Midwest.
