Ox and Finch team to launch Margo in Glasgow

Matt Gillan’s Heritage restaurant to become ‘events-led’ space

🍴 Heritage restaurant in West Sussex, launched in 2019 after a successful crowdfunding campaign by Matt Gillan, is set for a transformation. The venue, formerly a pub in Slaugham, will become an events-led space offering unique dining experiences such as high-end garden dining, masterclasses, gourmet retreats, and private parties. Heritage's final service under its current guise will be on 5 August. Gillan, a Michelin-starred chef, plans to continue the ethos of hospitality at the transformed venue.

Gabriel and José Luís Gonzalez are taking Lima to Shoreditch

🍹 Lima Shoreditch, set to open in late September, will take over Quercus restaurant in a Shoreditch hotel. More details released for JKS Restaurant’s third pub

🍺 JKS Restaurants is set to launch their third London pub, The Hound, on 17 July, occupying a former police station in Chiswick. It will join The George in Fitzrovia and The Cadogan Arms in Chelsea. The Hound will feature a pub, two private dining rooms with one seating 18 guests, a covered courtyard, a south-facing terrace, and will serve lunch, dinner, and bar snacks daily. The Cut & Craft lines up Manchester site

Sales up over 50% at Mission Mars

💸 Mission Mars, operator of 32 sites, reported a group revenue of £71.1m in FY23, up from £47.1m in 2022. Albert’s Schloss brand contributed £32.3m, up from £21.6m, while Rudy’s reported £29.3m, up from £16.1m. Albert’s Schloss saw a 6% like-for-like growth; Rudy’s experienced a 24% increase. Both brands outperformed their market segments by 15%. Adjusted EBITDA for FY23 was £8.7m, compared to £5.2m in FY22. Nine new Rudy’s sites and several potential Albert’s Schloss locations are planned. The largest Albert’s Schloss opened in London following an £8m investment.

Salt Shed duo to launch second Brighton restaurant

🍴 Founders Laurence Stevens and Francis Sweeney will open Salt Shed at West Pier in Brighton, joining Church Street's inaugural site and concessions at Boxpark Shoreditch and Herne Hill. Salt Shed features BBQ-glazed pastrami steak, Cornish lamb chump, and chocolate salted caramel brownie. The restaurant occupies a site previously launched as Murmur by Michael Bremner and Carla Grassy in 2017.
