🍝 Med Salleh Viet, a 35-cover restaurant in Earl's Court, serves Vietnamese dishes such as summer rolls and wagyu beef pho. Headed by Syphong Lam, this eatery was co-founded by her husband Koi Lee and Med Pang in 2022. The interior boasts dark wood furnishings and a painted Hanoian market scene.

🍽 Pachamama Group to expand with Zēphyr, a Mediterranean restaurant in Chelsea, following the eight-year run of Chicama. Original chef Adam Rawson and Greek executive chef Tzoulio Loulai collaborate on a 'produce-led' menu featuring Greek salad, day-boat fish, UK ex-dairy ribeyes, and cep mushroom pastichio. Interior inspired by wabi-sabi with European elegance. Launching in early November, Zēphyr marks the group's fourth London venue since its 2014 debut.

🏡 José Andrés Group and Thor Equities collaborate to launch The Bazaar House by José Andrés, the first hotel under the chef's brand, set to open in 2027 in Georgetown, Washington, D.C. This 67-key luxury hotel will feature a private membership club, multiple dining venues, event space, a wellness center, and retail options. José Andrés Group has a portfolio of 20 brands and 40 locations, and Thor Equities has spent seven years on local approvals. The Bazaar House aims to be a communal hub for both locals and visitors.

🍺 Julio Bruno, Executive Chairman of the Lío Group, leverages his experience across media, hospitality, and digital transformation to innovate Lío London's winter season. Following a record-breaking season with venues in Ibiza, Mykonos, and Mallorca, Lío London aims to top expectations with a new show, "The Jukebox." Bruno emphasizes the importance of authenticity, innovation, and a responsive leadership style. BeBeMe, a wine retail and bar experience, fits into London's luxury landscape by offering sophisticated yet accessible experiences. The success of Mercato Metropolitano highlights sustainability as a core business strategy. Lío London's doors open every Thursday to Saturday from October 4th, with dinner and cabaret at 7:30pm, and club nights from 11pm. Bookings are available on Lío's website.

🍷 Fables & Company, known for Plume in Covent Garden and Finch in Brixton, is opening its third venue, Quill, in Borough Yards this November. Founder Andrew Gray aims to make wine bars more approachable with a focus on storytelling. Quill occupies a 2000 square foot space, hosting 75 covers, and features an English garden and an eccentric wine cellar interior. Culinary Innovator Rob Wade, previously of Chez Bruce, Soho House Group, and La Truffiere in Paris, has crafted a menu highlighting British cuisine. The bar's design, by Sophie Bickness of Studio Bare, combines the historic with the contemporary. Activities such as 'Secret Notes', 'Tarot Readings', and traditional games nights will continue. Quill is part of a surge of new openings in Borough Market, joining established venues like Cahoots and Angry Crab Shack. Fables & Company formerly operated as Grays and Feather for 14 years before the new launch.

🏖 SLS Hotels & Residences debuts in Europe with SLS Barcelona this autumn, offering 471 rooms and suites, six dining concepts, three pools, a spa, and an 800 m² ballroom. Located at Port Fòrum, Barcelona, it's within walking distance to local beaches and Parc del Fòrum. Guests can enjoy a 50% discount through Dis-loyalty membership for stays from 16 December 2024 to 28 April 2025. The grand opening is set for early next year.

🏡 The Madison in Washington, D.C. joined Marriott's Le Méridien brand following a $15 million renovation, including its 356 guestrooms, lobby, and Lady Madison restaurant. Fairfield Inn & Suites opened in Kansas City, managed by Hotel Equities. U.S. hotel industry saw a 0.5% increase in occupancy to 68.9%, a 2% rise in ADR to $168.80, and a 2.5% increase in RevPAR to $116.22. Aman announced the Aman Maldives with 52 guestrooms and 16 residences, adding to its 35-property portfolio.

🏨 Choice Hotels International opened 17 MainStay Suites and Suburban Studios from January 1 to September 17, targeting extended stay segment. New hotels launched in Las Vegas, Moreno Valley, Calif.; Orlando, and Tampa, Fla. The company reports 16 out of 17 are brand conversions with an average turnaround of 120 days. Half of the 70 properties in the pipeline until March 2025 are also conversions. The "Kitchen-in-a-Box" concept streamlines the transition to extended stay properties, taking 3-4 months. MainStay Suites has over 125 locations while Suburban Studios has 100+ across the U.S., both offering full kitchens and participating in the Choice Privileges rewards program. Choice Hotels operates approximately 7,500 hotels with over 630,000 rooms globally.

🏕 Eden, a luxury boutique hotel, opened in the High Atlas Mountains above Dades Valley, Morocco, earlier this year. The hotel features 18 luxurious rooms designed by local artisans, a garden oasis by French architect Guillaume Berthier, a fine dining experience with seasonal produce from their kitchen garden, a hammam spa offering traditional Moroccan treatments, and excursions into the High Atlas Mountains. The Sabiri brothers, with over 30 years of hospitality experience, manage the hotel, emphasizing Moroccan hospitality and culture.

🏨 IHG Hotels & Resorts surpassed 200 open hotels in Northern Europe as of 24 September 2024, introducing brands in Germany, Hungary, Sweden, and Poland. Germany anticipates the debut of Kimpton Hotels & Restaurants and Garner in late 2024, and Candlewood Suites in early 2025. Hungary opened its first Kimpton and Vignette Collection hotels, and Sweden welcomed voco Stockholm. Poland plans to open Holiday Inn Express Lublin by end of 2024 and voco Katowice in 2025. In total, IHG has 197 operating properties and 169 in development across 13 Northern Europe countries.
