Ruby Hotels to strengthen its footprint in Germany

🏨 IHG Hotels & Resorts acquired Ruby Hotels in 2025. The brand's expansion includes a new Ruby Hotel in Berlin with 375 rooms, opening in 2028, and another in Copenhagen with 219 rooms, set for a 2027 launch. The Berlin hotel will be developed with Empira Group and operated by The Ruby Group, featuring a rooftop terrace on the Ku'damm Eck. Copenhagen marks Ruby's entry into Denmark, developed with ECE. Ruby Hotels, founded in 2013, now has 20 hotels and 12 under construction in Europe.

Accor reports sustained growth in 2024

🏦 In 2024, Accor opened 293 hotels, added 50,000 rooms, and now manages over 5,680 hotels and 850,000 rooms globally, with 1,381 projects and 233,000 rooms under development. Asia, Middle East, and Pacific regions account for 60% of planned openings for 2025. Accor's 36% of hotels are eco-certified, a 330% increase from 2023. Mercure reached its 1,000th hotel, and ibis plans to open in its 80th country. The Luxury & Lifestyle division opened one hotel per week on average and signed around six projects per month. Orient Express La Minerva in Rome is set to open in 2025. Accor focuses on innovation and expansion in growth markets for 2025 and beyond.

Goose + Berry and Liberty Announce New Restaurant

🍴 Goose + Berry to open "Seventy Five at Liberty" on April 8th, coinciding with Liberty's 150th anniversary. Located on Regent Street's second floor, the 1,800 sq ft restaurant offers 84 covers, serving brunch, lunch, afternoon tea, and supper, plus private hire. Head Chef Joe Holness, ex-Fera at Claridge’s and Da Terra, presents a sharing-style British menu with local, sustainable ingredients. The design by Thirdway features Liberty prints, with an ongoing Artist in Residence series, starting with Sir Quentin Saxby Blake. Open seven days, operating hours are 10am-8pm (Mon-Sat) and 12pm-6.45pm (Sun).

Aimbridge Hospitality EMEA adds nine new properties in Q1 2025

🏨 Aimbridge Hospitality EMEA signed nine new properties in Q1 2025, adding over 1,300 guestrooms. Six hotels from ProArk will operate under Mercure in Bedford, Cardiff, Harlow, Nottingham, Telford, and Birmingham, in partnership with Accor. The portfolio includes dual-branded Hyatt Place and Hyatt House in Leeds, plus Hilton Garden Inn Birmingham Airport. Aimbridge saw increased guest satisfaction scores in 2024 thanks to customer service investment and looks to continue the trend in 2025.

Meliá Hotels to launch luxury hotel on Costa del Sol in 2026

🏨 Meliá Hotels International to open The Bahía Estepona, the first project on the Costa del Sol under The Meliá Collection, in mid-2026. The luxury hotel, located in Estepona, Spain, will offer 134 rooms and suites with Mediterranean views, and amenities such as a fitness center, spa, and three restaurants. 20 minutes from Puerto Banús and 30 minutes from Marbella, it's part of Meliá's expansion with 30 hotels in Andalusia, including upcoming projects in Cádiz, Ronda, and 16 more in Málaga.

Lodging Dynamics is taking a Park City Hotel into the Marriott family

🏨 Lodging Dynamics Hospitality Group converting Park City Peaks Hotel into Hotel Thaynes, a Tribute Portfolio Hotel by Marriott Bonvoy. $21-million renovation expected to complete in October, featuring updated guestrooms, public spaces, and amenities. The 128-key property, located in Park City, Utah, will maintain Versante Hearth + Bar and provide shuttle service to nearby ski resorts and Main Street. Amenities include an indoor pool, outdoor heated pool, hot tub, sauna, fitness center, steam room, fire pits, and BBQ area. Hotel Thaynes will join over 150 hotels in Tribute Portfolio, in nearly 30 countries, offering boutique hospitality with local culture integration. Marriott Bonvoy members can earn and redeem points at this property.

Premier Inn continues to expand in Germany

🏨 Premier Inn and Lechner Group plan to develop a 202-room hotel in Frankfurt Gateway Gardens, near the airport, with a 40-space underground car park. Construction in De-Saint-Exupéry-Straße is scheduled to start in summer 2025 and finish within 18 months. They also collaborate on a 174-room hotel in Eschborn, starting December 2024, with completion expected in May 2026. Modular construction will be used, allowing room installation in just two months after the ground floor is built.

Indian chef Regi Mathew has opened Chatti, his first stateside restaurant, in New York City

🍳 Award-winning Chef Regi Mathew, with 30 years of experience and two restaurants in India, opened his first U.S. restaurant, Chatti, in New York City on Feb. 12, south of Times Square. Inspired by Kerala's toddy shops, Mathew researched for over three years, visiting 70 toddy shops and 265 homes in Kerala. Chatti seats 80 guests, plus 70 in a mezzanine party room, and features a 10-seat private dining area. The menu offers seafood, vegetarian and non-vegetarian curries, fermented palm wine-inspired cocktails, and desserts like spicy bird’s eye chile ice cream.

John Resnick and chef Eric Bost plan Lilo in Carlsbad, Calif.

🍴 Restaurateurs John Resnick and chef Eric Bost to open Lilo on April 17 in Carlsbad, Calif., a 22-seat restaurant featuring global coastal dishes, housed in a former boogie board factory. Lilo joins their other establishments: Campfire, Jeune et Jolie, Sister Spot, and Wildland. It offers a 12-course tasting menu starting at $265, created with chefs Dusan Todic and Madeline Biehl. The menu includes canapés and dry-aged dishes, curated by wine director Savannah Riedler and beverage director Andrew Cordero. Design by Bells + Whistles, Lilo is located at 2571 Roosevelt St., open Tuesday to Saturday from 5 p.m. to 11 p.m. PDT.

The Standard unveils a new address in Brussels

🏨 The Standard hotel brand set to open a new establishment in Brussels by May 2025, part of the ZIN redevelopment project. Occupying a refurbished tower of the former World Trade Center, the 28-floor hotel features 200 rooms and suites, a multi-purpose lobby, a botanical garden, and dining venues including Double Standard and Lila29, the latter on the 29th floor. Driven by Verena Haller's design, the hotel mixes post-war modernism with Belgian Brutalist influences and offers extended stay suites with premium services.
