🏖 Lough Erne Resort, set within 600 acres of Fermanagh Lakelands, invites visitors to savor summer through curated experiences designed for relaxation. Starting from £175 per night, the "Move To Our Rhythm" package includes a two-night stay and activities like exploring Marble Arch Caves. The "Cruise Through Summer" offers a one-hour boat cruise from £199 per person. Guests can also opt for self-catering lodges, offering freedom to explore local attractions like Enniskillen Castle and Florence Court House.

📍 Scheduled for the last quarter of 2028 in London, a new dual-branded IHG development will add 354 rooms to their portfolio. The voco London – Waterloo will feature 182 rooms, while Hotel Indigo & Suites London – Waterloo will offer 172 rooms, marking its European debut. Both will share amenities and are situated near cultural landmarks. The project aims for BREEAM Excellent certification, incorporating sustainable technologies. This expansion strengthens IHG’s UK presence, collaborating with Palm Holdings.

🍝 Chef Matt Wilden will open his new restaurant, Perro, in Kings Heath, Birmingham, in late June 2025. Perro offers a cozy 12-seat space, serving Mexican-influenced small plates and cocktails by Katie Rouse of Couch. By day, it features deli sandwiches and Vietnamese iced coffee, transforming at night into a low-lit dining spot. Perro will host creative events, fostering a community spirit. 🏖 Scandic Hotels and Lima Besparingsskog will lease a new hotel in Sälen with 120 rooms and 16 apartments. It will boast ski-in, ski-out access between Tandådalen and Hundfjället. The hotel features a wellness area, and a new ski lift will be added. It's part of Scandic's Nordic expansion, including new openings in Stockholm, Gothenburg, and Umeå by 2026. The eco-friendly hotel will be certified by Nordic Swan Ecolabel, promoting sustainable practices.

🍴 In July 2025, HUŎ will open in Belsize Village, London, expanding from their 2021 Chelsea debut. Restaurateurs Graham Rebak and Adam Wilkie bring Asian cuisine to NW3. Head Chef Yam Gurung's menu features Chinese and Southeast Asian dishes, with sharing plates like Thai Lobster Crackers and Szechuan Chilli Prawns. Designed by Jonathan Clark Architects, the space accommodates 110 guests across a main dining area, bar, private room, and terrace. The restaurant features Asian art and vibrant decor.

🏨 Expected last quarter 2028, IHG Hotels & Resorts, in partnership with Palm Holdings, will open voco London – Waterloo (182 rooms) and Hotel Indigo & Suites London – Waterloo (172 rooms) in Central London. Located near iconic attractions, the hotels will offer shared amenities and sustainable design targeting BREEAM Excellent certification. IHG's expansion includes 363 UK hotels open, 33 in the pipeline. Architectural collaboration by Studio Moren aims for engaging, locally inspired environments.

🏨 Ascott, the hospitality arm of CapitaLand Investment, rapidly expands its luxury brand, The Crest Collection, adding over 1,200 units in Japan, China, UAE, and Saudi Arabia. By 2029, SEN/KA TOKYO opens as the first Japanese property. Al Mahra Resort in Ras Al Khaimah launches in 2027, marking the first resort. The brand now boasts 16 properties in 13 cities. To support growth, Ascott introduced The Crest Chronicles, a program celebrating each property's heritage stories.

🎸 In April, Rock N’ Roll Sushi opened its 74th location in Port St. Lucie, Florida, owned by Nick and Vinny Gannascoli, making it the 15th in Florida. Established in 2010 in Mobile, Alabama, by Lance and Gerri Mach Hallmark, the franchise features a 2,000 sq ft, rock-inspired décor. The menu includes creatively named sushi rolls and other dishes, offering a unique dining experience. All locations operate as franchises.

🏨 Radisson Collection will expand in 2025 with new hotels in Lyon, Budapest, Berlin, Brussels, Lake Como, and Casablanca. In 2024, they opened hotels in Roma Antica, Riverfront Srinagar, and Cape Town. The Lyon hotel features 61 bespoke rooms, a spa, and a restaurant. The Budapest hotel opens in March, Berlin in April with a 16-meter-high vertical garden, and Brussels in Q2. Lake Como follows in Q3, and Casablanca in Q4. These expansions include the "Taste of Heritage" culinary series.
