🏨 The Wensleydale Hotel in Middleham, owned by the Merchie family since 2019, has been sold to Oliver Kwok after six years. This 18th-century hotel features 17 en suite bedrooms, a restaurant, a bar, and a private dining room. Middleham, known for its horseracing stables, enhances the hotel's attraction. Kwok plans to focus on sustainability while supporting the community. The sale, conducted by Christie and Co, marks their eighth major sale in the Yorkshire Dales' National Park in four years.

📍 The Wesley Camden in London earned a BREEAM ‘Excellent’ rating for its sustainable design and heritage preservation. They use electricity only, eliminating gas, and have installed water-saving devices. Rooms are preheated as needed to conserve energy. Thermal upgrades and bat boxes enhance biodiversity and energy efficiency. Fixtures were chosen per the Green Guide to Specification, preserving elements like parquet flooring and stained glass. The Wesley Camden focuses on sustainability, mirroring its sister hotel in Euston.

💡 Voco Winchester Hotel and Spa has achieved Green Key certification for environmental responsibility. Over 4,000 establishments in 60+ countries hold this accreditation, assessed against 130 criteria. The hotel, rebranded last year after a £2m refurbishment, has 131 rooms and employs sustainability measures like LED lighting, EV charging, and 75% eco-labeled cleaning chemicals. Manager Joe Davidovitz emphasizes reducing environmental impact while providing exceptional service.

🍳 Remington and Meyer Jabara Hotels are integrating sustainability into kitchen operations. Remington's green practices save 3-5% on food costs, while Concord Hospitality achieves 1-2% savings. Sustainable sourcing and partnerships, such as with Avendra, enhance F&B efficiency and reduce costs. Food waste tracking with tech like BioGreen 360 and manual logs cut excess. Equipment upgrades, like low-water dishwashers and ENERGY STAR appliances, minimize resource use. Staff training emphasizes sustainability, improving efficiency and morale.
