🍴 Nik Fields, aka "The Chic Chef," is opening The Collective, a multi-concept venue in Phoenix, Arizona, on August 25. It combines a coworking space with two culinary brands, The Mix and The Grind, and features an Entrepreneurial Hub. The menu includes unique offerings like the S.H.E.O Biscoff Caramel Breve and Boss Babe latte. Fields aims to expand in Phoenix and NYC, possibly adding new concepts like a smoothie bar. Currently, she owns four businesses in Phoenix.

🍽 Chef Ji Hye Kim expanded her culinary footprint with Little Kim, a vegetarian fast-casual spot, opening on August 1, 2025, in Ann Arbor's Kerrytown. This 24-seater embraces Korean and other Asian influences and features build-your-own bowls, daily kimbap, and a fried tofu sandwich. Despite proximity to her full-service Miss Kim, Little Kim thrives with its distinct menu and lunch hours. Miss Kim has been open since 2016 and has received five James Beard Award semifinalist nominations.

🏨 Mainland Capital and Russell Property Group will inaugurate the Sheraton Christchurch in mid-2027, located alongside the Avon River. With over $150 million invested, the 14-story hotel will offer 240 rooms, a rooftop bar, and a club lounge. The venture is backed by Emmons Developments New Zealand Limited, with architectural input from Dalman Architects. This marks Marriott International's expansion in New Zealand, adding to its existing two hotels. Construction is underway, adhering to A-Grade standards.

🏨 Capella Hotels and Resorts opened its first property in Macau as part of a partnership with Galaxy Macau. The soft opening features exclusive stays and previews. Designed by Paris-based Moinard Bétaille, the hotel has a tropical jungle theme. It includes 95 accommodations with suites and Capella Penthouses. Highlights include private infinity-edge pools and outdoor lounges. Clive Edwards, SVP, calls it the pinnacle of luxury hospitality in Macau.

🍴 In summer 2025, Cédric Grolet Monte-Carlo opened at Hôtel de Paris Monte-Carlo, offering artisanal pastries daily. Le Café Lacoste, a pop-up at Hôtel Le Méridien Beach Plaza, is open until 2026, featuring Lacoste-inspired cuisine. Anahi Monaco introduces Argentine flavors with a Riviera twist. 99 Sushi Bar in Mareterra district offers Japanese dining with a marina view. Monaco reinforces its status as a center for culinary innovation and luxury.

🏖 Rimrock Banff, a historic retreat in the Canadian Rockies, undergoes a major renovation from October 2025 to summer 2026, emerging as North America's first Emblems Collection property. Located near downtown Banff, it offers proximity to the Gondola and Hot Springs. With Oxford Properties Group's backing, the redesign by Studio Collective introduces features like an infinity pool, vitality pools, and panoramic saunas, enhancing its wellness-focused offerings and preserving its connection to nature. Emblems Collection plans to expand to 15 properties by 2025.

🍴 JKS Restaurants, founded in 2008 by the Sethi siblings, operates 35 venues, including Gymkhana. In October and November 2025, new Ambassadors Clubhouse and Gymkhana locations will open in New York City and Las Vegas. Gymkhana, with signature Indian dishes, partners with Aria Resort & Casino, aiming to elevate Vegas's culinary scene. The expansion is part of a broader U.S. entry strategy, with plans for a retail line, Gymkhana Fine Foods, and further restaurant openings.

🏨 Rocco Forte Hotels will open The Carlton Milan in November 2025. Located at Via Senato 5 and Via della Spiga 8, it offers 71 rooms and suites. Online reservation starts September 2. Designed by Philip Vergeylen, Paolo Moschino, and Lady Olga Polizzi, it features a restaurant, cocktail bar, and spa. Chef Fulvio Pierangelini leads dining. This is Rocco Forte’s 16th property and second in Milan, aiming to connect guests with Milan’s culture.

🏨 My Place Hotels of America opened its first California hotel in Redding at 2609 Larkspur Lane. Owned by Pacific NW Redding LLC and managed by Legacy Management, the property boasts 64 guestrooms with full kitchens and free Wi-Fi. Near Redding Municipal Airport and local attractions, the hotel aims to provide affordable accommodations. CEO Ryan Rivett emphasizes expansion in the Pacific Northwest. The pet-friendly hotel includes 24-hour facilities like laundry and a business center.

🏨 BWH Hotels adds Kastens Hotel Luisenhof, a five-star hotel in Hanover, Germany, to its WorldHotels Luxury Collection, marking the first German inclusion in its 160-property portfolio. Founded in 1856 and operating under its current name since 1952, the hotel offers 149 rooms, event spaces, a fitness center, and a gourmet restaurant. Serving the Messe Hannover trade fair, the hotel is managed by Marc Biewald since 2024, emphasizing tradition and modernity.
