🏞 The Waterside Hotel, owned by SimpsInns, is expanding with a new £3m spa, creating 30 jobs in West Kilbride, Ayrshire. Opening in early 2026, the spa will feature six treatment rooms, a Rasul experience, thermal area, and outdoor facilities. The hotel, 40 minutes from Glasgow, will increase its room count from 23 to 40. SimpsInns emphasizes career development and staff benefits, including discounts at their facilities across Ayrshire.

🏨 Met Hotel Leeds reopens Gott’s Bar and Kitchen after a major refurbishment of its Grade II listed building, originally opened in 1899. The refurbishment, which began in 2023, preserved the terracotta façade and Victorian detailing while updating interiors such as the entrance and function rooms. The hotel now includes nine function rooms with modern facilities. The renovation emphasized sustainability with locally sourced materials. General Manager Mike Liddle highlights the blend of historic charm and modern hospitality.

🍔 Melody Adams opens Maset in November on Chiltern Street, London, offering French coastal cuisine from the Occitania region. The menu reflects her experiences in Occitan, featuring dishes like Bouillabaisse croquettas and Pâtes au Pistou. Wines are sourced from small vineyards in France, Italy, and Spain. The design, by Parisian studio Haddou-Dufourcq, provides a welcoming, homey atmosphere. Maset aims to blend the warmth, style, and authenticity of South France with a modern twist.

🏨 Hyatt Place Bozeman Yellowstone Airport has opened with 130 rooms, including 15 suites, marking the first Hyatt-branded hotel in the Bozeman area. Located steps from Bozeman Yellowstone International Airport, the hotel is 15 minutes from downtown Bozeman and 90 minutes from Yellowstone National Park. It features a 360-degree fireplace, business lounge, fitness center, and heated patio. Developed by West Post Hotel Partners LLC and managed by Concord Hospitality, it offers a full hot breakfast buffet and will soon host The Social Story restaurant.

🏨 Hilton Milwaukee completed a $42 million renovation, blending 1920s architecture with modern design. Updates include a refreshed lobby, redesigned 554 guestrooms, and 34,000 square feet of meeting space. Originally opened in 1928 as the Schroeder Hotel, it was rebranded as Hilton Milwaukee City Center in 1995. The hotel offers dining options like Milwaukee ChopHouse and Miller Time Pub & Grill. Located near the Baird Center, it serves as a hub for visitors and locals alike.

🏖️ Montage International and partners Thor Urbana and Life Properties International plan to develop the luxury Montage Valle de Guadalupe resort in Mexico's Bruma Wine Estate, opening in 2028. The resort will offer 62 guestrooms, Montage Residences, and numerous amenities, including a 4,000 sq ft wedding lawn. Valle de Guadalupe, producing 90% of Mexican wine, is an hour from the U.S.-Mexico border and home to Michelin-star restaurants. Future plans include a curated wine club and equestrian facility.

Le Specialità Expands to Miami 🍕 Le Specialità, founded in Milan in 1977, opened in Miami's Design District on November 10. Led by Spicy Hospitality Group, this 100-seat restaurant features a "Milan meets Miami" design by Rockwell Group. The menu includes over a dozen pizzas and classic Italian dishes, while the bar offers a 260-label wine list. Future expansions are planned beyond Miami, along with new ventures like Karyu and Yasu in the Design District.

🍵 Maman, a café brand founded by Elisa Marshall and Benjamin Sormonte, opened its first Texas location in Dallas on November 20, 2023, at The Plaza at Preston Center. Established in New York City in 2014, Maman is known for its French provincial style and unique offerings, like the Croque Maman and celebrity collaborations. The Dallas spot features Texas-inspired menu items like the cheesy brisket croissant and implements a no-laptop policy to promote social interaction.

🏨 Fort George Hotel and Spa in Belize City was awarded Belize’s Best MICE Hotel for 2025 at the World MICE Awards in Bahrain on 6 December. The Lord Ashcroft Centre, offering over 6,600 square feet of flexible meeting space for up to 500 guests, was a significant factor. Opened in early 2024, the hotel features in-house event planning and a new room tower set for 2026, adding 120 rooms. Located 30 minutes from Philip S.W. Goldson International Airport.

🍷 Lancaster House Hotel completed a refurbishment of its Sandeman Bar, inspired by its 30-year connection with the House of Sandeman and its 1790 origins. Managed by Tammy Barwell, the update features new furnishings, artwork, and a Sandeman timeline. The design was influenced by a research trip to Porto and includes details like upholstered seating and a branded barrel. The bar continues to host port and cheese events, celebrating its history with Sandeman wines from Portugal's Douro Valley.
